Timing.
I know exactly how the first part was done - it was in a Penn and Teller book that I read as a kid. The second half I have no clue, the P&T trick had a simpler though similar ending using another soda can.
Compressed air capsule in the cork to pop it off. A cork coming out of a bottle doesn't sound like that. No one looked at the cork, but Dan made sure they drank the soda and champagne.

The bottle is just a matter of minutes till it goes, so he either is the god of time, or he either removed the cover at a certain time looking at his clock and made sure to get back to it exactly when he knows it will pop

i doubt that you can predict/time the pop that perfectly. just a little interruption by tariq and the trick wouldnt work. there has to be some extra mechanism to get the carbonation going rapidly on command.
