      St. Patrick is important, but San Guiseppe sounds wonderful, too. For us it is Clean Monday, so I cooked pasta with shrimps, but Eva would have been horrified, since I used Passata and let the dish cook for a full 20 minutes. I cannot digest pasta al dente!😊

    Hey Harper -- I grew up in an Irish Catholic neighborhood. I have a great suggestion for your costumes. Get a corned beef brisket. Make a pastrami rub from some coriander, black pepper, paprika, maybe some mustard seed and garlic power (if you get the garlic powder, hide it from Eva, the poor dear). Set up your smoker. If those costumes will burn, use them to start the fire.

    Ava is such a good egg! All my Italian life we’ve had zeppoles for St. Joseph’s day AND on Easter. However, we’ve always filled the pastry with custard, not just laid it on top. The custard is the star of the show! That’s how I like it, just like a cream puff. For the first time I bought the Italian cherries, can’t wait to try them. Oh dear, how does one ever lose any weight like this?!

      Since you have bought the cherries, you can try them on chocolate icecream, or cream icecream. They are amazing. My granny used to put them in chocolate pudding as well.
      Their acidity pairs really well with rich, sweet ingredients 😊

      Actually, id rather it be the question Harper asked vs stepping in assuming help is needed. I expect they have a good rapport and one knows the other can help when needed.

    I'm half Irish, half Italian and we celebrated from the 17th to the 19th. My family made St. Joseph cookies. Filled with ground chickpeas, cinnamon, honey and chocolate pieces, Pasty crust, deep fried. I'm sending your Irish Zeppole recipe to my brother. He'll love it.

      I love that I learned to be able to identify choux pastry from how it ends up in the pot. The texture is so unique and then adding the yolk. Thank you, GBBO, for all of the contestants who were so worried about their pastry coming together properly.

      I dunno: hazelnuts are also called filberts because they’re harvested on the feast of San Fillipo. I think he was French?

    My Zio Patrizio’s onomastico is twelve days after his compleanno, so we didn’t have zeppole for him, although I made 97 ravioli for his 97th birthday (45 mushroom/spinach/mascarpone and 52 ricotta/pecorino/parsley). I’ve made both baked and fried zeppole di San Giuseppe, and I slightly prefer the baked. They’re lighter and hold more custard. The Amarena Fabbri cherries are absolutely necessary. If they don’t have them at the store, have them shipped. So delicious (and worth the price)!

    I had a "Sicilian" (or so the cook making it said) Zeppole di San Giuseppe which had Fior di Sicilia in the custard and topped with chopped Citron and other candied citrus as well as pistachios. It was delicious!

    You can also freeze egg whites. And a super easy recipe is pan di spagna (sponge cake) with only egg whites (60g of egg whites instead of 1 whole egg).

    Here we go again with the “name depends on where you are” thing; I’m from the New York area, my grandparents were from Napoli, these things are called “Sfingi di San Giuseppe “. The recipe I use is from “il Talismano Della Felicitá” by Ada Boni. That recipe bakes them. A zeppole, at least around here, is a sweet yeast dough fried in huge vats of oil and tossed in sugar at San Gennaro, in September. Don’t even get me started on sfogliatelle….Anyway, thanks for the video, and for introducing Harper to Amarena cherries. They even have them at Costco these days.

    Eva is a trip! Harper, you don't know how lucky you are to have her in your life. 😊
    To open a new jar, tap the edge of the cap on the counter while turning the jar all around.
    This breaks the seal, and then it will open easily.
    Most chefs will temper eggs with only a little of the hot liquid while mixing. Then add the rest. This avoids ending up with scrambled, lumpy eggs.

    As always, I love all of the amazing recipe that Ava makes! I’ve tried many of them, and they are truly amazing! However, I have a question…..How does she know how to make so many unique and unusual things? Where did she learn how to make all of her wonderful recipes? Many other influencers on RUclips make the most well known things, but Ava knows how to make so many unusual things, like today’s Zeppole, she’s really special!

      Zeppole are not unusual, they are very common in southern Italy and you can also find them in other parts of Italy on saint Joseph's day..😊 Italian cuisine is very regional with many different recipes and evidently Eva is passionate about it👍

    My Nonna loved to celebrate San Giuseppe with lagane e ceci. I’ve never made the lagane from scratch, but I often prepare the ceci with some short pasta-preferably calamarate o mezzi rigatoni. Buonissimi! 😋

    Do not know about Ireland but there are English walnuts. Not widely grown now but can still be found in some orchards. 😊😊😊😊

    I love Italian sweets and so very many are Sicilian. Thank you for all the recipes for desserts, etc. I have been looking for a recipe for a cookie called “Britton
    ma Bouni” (probably spelled wrong), which means Ugly but Good. They are toasted almonds with a chocolate meringue. It sounds easy and I have tried winging it, but didn’t get it right. I hate wasting expensive ingredients, so I am hoping you have a recipe for them.
    I had some from an Italian bakery in San Francisco years ago and they lived up to their name. They were not pretty and were very, very good.
    I had hundreds of cookbooks gathered over 60 odd years, but they were all lost 8 years ago when we moved. I have looked in every Italian or dessert cookbook in our local library and they have even more cookbooks than I did, but no luck.
    If you have not made them for your show, they would be a good candidate an easy and delicious cookie. I hope you accept my request.
    I have great respect for your channel and enjoy it immensely. Keep on doing for many years to come!

    The Zeppole look delicious, I'll try to make some soon. I grew up in New Orleans and there were many immigrants from both Italy (especially Sicily) and Ireland who settled there in the 19th century. There are celebrations honoring St.Patrick and St.Joseph and of course lots of good food and drink. There still are many elaborate St.Joseph's Day altars which include a wide variety of delicious Italian pastries .

      Great job once again Eva! Both versions look delicious, but I suspect I'd prefer the St Joseph's variation with the Amarena cherries. I've only ever had them in gelato but I'm sure they go beautifully with the custard.
      BTW when I moved to Ireland I was told a number of times that NO ONE in Ireland uses the expression 'top of the mornin.' Happy St Patrick's Day!

    Ok, I have to try this. My dad was Sicilian, name was Joseph, always celebrated at our old neighborhood. I never tried making them, but not so intimidating. Thank you Eva.     Oohh!! This looks delicious!! I make a Portuguese fried dough out of pate Chou called sonhos. This one is beautiful. Will try it. Love the custard.
