Hi chef I am a home baker. While making cakes I use all products in room temperature... but your are say to chilli the eggs or egg white in fridge... why? When I do beating with chillies egg white it is not working properly why? I used to heat the egg and sugar mixture slightly using hot water bath and that works me fine ...
It all depends on the environment that needs to be taken into account.i have explained in the video for what reason eggs need to be in the fridge and for how much time.👍
