  • Beef ribs are one of the best bbq bites around. These beef “Dino Bones” ribs came from ribs 6-11 on the cow. I started with trimming the hard fat off that wouldn’t render off during the cook. I then seasoned with a hot sauce binder and a rub heavy in salt and pepper. I then put them on the Traeger at 225° super smoke until they reached around 165°. What I look for is that bark to have set nicely before wrapping. I also spritzed after a couple hours with a little beef broth. I then wrapped in butcher paper and put back on the smoker at 275°. I cooked these until they get probe tender which was around 204° on this cook. 🦖
