In my forge I have a Wall Of Fame for knives and swords I'm proud of, perhaps finish the katana and hang it in your shop; assuming you don't want to sell it. Either way, it's one to be proud of - congrats.
Finish it mate, too much work to chop it up. I had the same issue with a tanto/waki. Ended up giving it a bit extra sori before quenching as the spine was very thick compared to the rapidly cooling edge trying to pull it straight. Took three attempts Haha.
Water cool down the blade quickly that's why it produces curvature unlike oil it cools down slowly that's when when it's time for the spine to warp-back the edge already hard
In for a penny, in for a pound. She's going to cut when done, curved or straight. You've done the grunt work. Take care to temper the transition from blade to tang well. No shock cracks wanted there. Why not take it up to 320 grit and slap on a temporary handle to see how it performs before investing days on the polish? That's a powerful weapon. Don't hack it in two!

Exotic carbon steels don't ..tend to act like Japanese sand iron and steel so! The only answer? Is to cheat! All you're going to do is help it along a little bit take old ? Log and make shift wooden mallet place hot blade on log strike once with mallet get just visible curve and that's it! done!
Oil quenched? You didn't see anything in the hamon. Its only different hardend. You will see a white line and a dark line behind. Nothing more. No chikei, no ashi, no ara-nie, no life. That blade isn't good overall. To thin and a bad shape.
Tough call I think a pair of matching swords might be neat. Finish it with a little more etch and then make the call you can always cut it but it may be a bit of a challenge to put it back together. What ever the choice nice job and you need to be proud if it ! Be well and be safe............

Aren't you suposed to quench katana's in water?
You can do with this w2 steel but the edge being this thin it would have cracked for sure. 👍
