its a hard dish to cook but you can get rid of that "smell" by adding more ginger and lemon grass. also make sure to cook the vinegar properly or youll get strong acidy sour taste to it.
@Jonny, “Laing” is probably going to take you 3 days... please read up on how to prep the taro leaves (I’m also not sure how to do that myself). Taro will feel scratchy on your throat even after cooking for a long time, and the dish could be inedible.

You're using the right chili. Haba means long. Sili means chili. Siling haba is long chili. They are also called siling pangsigang, meaning sinigang chili. They have a different aroma compared to red chili, but both delicious nonetheless. I think some use purely the blood, harden it, then it forms like a fudge i think, slice it in squares, insert bamboo sticks just like barbecue, then grill it. They call it betamax. Idk how to do it though lol Puto is basically eating rice but in mini cake form. Some add melted butter mixed in batter. Some topped with cheese. There's so many variations. :)

For the lumpiang shanghai, sauce either ketchup or sweet n sour For the lumpiang gulay (fried), soy sauce+vinegar with lots of garlic and put a little bit of sugar. As for fresh lumpiang gulay, sauce or sawsawan in tagalog is peanut with garlic.

@@otchsigua8223 if you don't know, i am filipino so i see your point. although there are different filipino languages/dialects, and the one most will teach or try to explain to pronounce properly say something in tagalog; but i think it can be hard for some as we are one of the Austronesian language groups that is hard to speak for some. our vowels are not necessarily a easy aeiou type of english tonals. for example ocho ocho or as some may say it oho oho as the ch in ocho ocho is not as strong of ch sound. not only that as a person who is a linguist in the sense of my future minor in linguistics its definitely hard when you use the IPA (not the beer, but the International Phonetic Alphabet). definitely we can teach, but it will take time for the learner to get used to it. also things like google translate is not great in saying it all the time.
incase you guys ever consider doing this again, try to make the crispy version, basically it's almost the same procedure but you'll have to fry your pork like how you made your crispy pata, cook the blood till it's not too saucy before putting in the crispy pork. ps: i just binge watch all your videos.. you earned a new subscriber here.

Tripe is pretty healthy for you, but it depends on the preparations. So Yes to some extent it is a Acquired taste, what did used in a lot of Asian dishes such as Filipino food. Nonetheless I’m still happy you guys decided to try it, since that was one of my suggestions.

In Pampanga our dinuguan is more big chunks and our soup is not thick... I miss my mom's dinuguan.. Really yummy..
You need to add dried bayleaf and powered black pappers too. That should may the smell a little bit better.
In our province in Bohol, we cook dinugoan with the intestines. And I love it when there’s pig’s ear. It gives it the crunchy feel.
