Nothing wrong with cooking with ketchup. It is the worlds greatest sauce Made with tomatoes and fresh herbs. The pepper vinegar, I like Louisiana Brand. The best is to make my own with fresh peppers. That way you can get the spice and heat just right.

Love me some NC Brunswick stew. I've made a small portion on the kamado grill. I've also made some for a large crowd. Nice recipe here. It's like gumbo in that it's even better the next day.
Lee Setzer Scott's just recently celebrated 100 years. I went and met with Mr Scott and his family. Super nice folks and very humble. I will be doing a video when the weather warms up a bit using their sauce.
I can't wait for the video. I've been using Scott's sauce for years along with George's BBQ sauce of Nashville, NC. It's a milder eastern style, but very flavorful. It's also fun to start with vinegar in a saucepan and start adding spices and things.......Glad I found your channel, thanks to Rus.

As far as when was originally started I'm not sure. Authentic Brunswick stew claims to use game meat such a squirrel, opossum, or rabbit meat and simmers all day to allow the tougher meats to tenderize.

Warning: Be careful if using organic ground cayenne pepper. It is VERY hot 🥵 Butter, chicken stock, mustard, brown sugar, Apple cider vinegar & liquid smoke all enhance the flavor profile of Brunswick stew. Think of the flavor being a tomato based sweet/sour/spicy/savory BBQ Chicken & Pork stew with vegetables. Also, better to precook the corn and cream in a food processor for the most classic flavor & texture!
Brunswick stew came from Georgia it's historically what they refer to as a refrigerator soup whatever is left over that's what you would put in it but in Georgia it became chicken pork and beef and whatever type of vegetables some people don't like a whole lot of corn some people like a lot of corn some people I like lima beans my uncle didn't like lima beans.
BigMac Mick - Some Brunswick stew recipes call for beef as well. Most BBQ restaurants don’t sell beef in NC, so they just use what they have. Family recipes & church recipes will call for beef. And the recipes get even more different in Virginia & Georgia, who both lay claim to creating his southern dish.
