I really like your idea to cook the chicken again to make more broth out of it! I have followed a Turkish chicken soup recipe, they cook the chicken before making the soup, I found this method make really rich broth. Thanks for sharing.

I recommend you to try fish maw corn soup with your chicken base soup. 沙爆魚肚好正! . I remove legs & breast first, only use carcass & wings for soup. Breast is diced for cream of corn chicken dish, or 雞扒。 Legs & thighs are for chicken curry with onion and potatoes or red braised with woodear and shitake mushroom.

Instant pot 煲湯或蚊肉有一個缺點,因為水沒有在煲內翻滾,所以味道會分開一層層,膠質亦沒有乳化,所以而要明火翻滾一下,味道就會倍增。
其實人體係需要脂肪同膠原蛋白,只要室溫唔會凝結成固體就唔太怕食。
這個雞湯用來做上湯煮餸都幾好,值試吓!
我大致都是這樣,只是待湯凍透了,在上面鋪一層保鮮纸,盡量將保鲜纸貼在湯表面後放雪櫃,翌日取用時,會見到脂肪貼着保鮮纸,成塊起纸,便是清湯喇。啱用,試吓。😄
任何湯可以放雪櫃,最重係未飲之前,唔好落鹽,因為落咗鹽嘅話,隔夜會有化學作用,就係「亞硝酸鹽」啦!我會放湯係碗然後才加鹽輕輕攪勻才飲。

好正! 雞湯味道的主要來源是雞骨, 雞肉比較清淡無味。
如果想雞肉都食得 你煮湯前可以將所有雞肉起哂出黎, 只用雞骨煲 。成品一樣好飲 但當然煲出黎份量會小啲。
留落的雞肉就點整都得,一雞幾味好抵架。
PS: 雞肉起骨的方法可以係youtube一啲日本師傅的片段。初次起肉可能要40分鐘,做多幾次就10分鐘😁

用保鲜纸蓋住冷凍雞湯,在保鲜纸上開個洞,然後把雞湯倒在碗上,效果很好。
乾河粉有得揀最好買越南生產,煮之前用水略為浸軟,雞湯加魚蛋煮滾後拎起浸軟河粉加入,煮到啱自已中意軟硬度就可以分碗食得.3樣材料唔使分開煲咁麻煩.越南河粉好處係粉好薄易吸湯味道和唔會有太多澱粉釋出.

在英國想食香港嘢,就要自己動手,但好多材料都無,唯有加些想像力。今晚我就跟星星師父煮酸辣湯,希望成功。
yea,加些想像力->本地食材, 變通變通, 嘗試 + 嘗試-> 成功!
用呢款煲煲湯,時間唔駛太長,最重點是開煲後,原煲翻滾20分鐘,等湯變濃就可以,到時先隔渣,功夫會慳好多!
隔油方法攤凍咗啲雞湯,然後放入冰格裏面或者兩三個鐘後就一層油就硬咗成塊油拎出嚟就最容易嘅方法如果唔急食嘅隔夜擠入冰格裏面
除了自動熄火等時間掣外,只講食物效果和慳燃料,其實是明火的高壓㷛優勝! 尤其是瑞士品牌的高壓㷛:安全、效能、烹調控制、鋼才品質、耐用!

我用佢整滷水牛踺,就咁加可樂同滷水汁,用Stew button, 之後攞去雪,同出面差不多,超方便。

Suggest you try using the soup to replace water when you cook rice. Leaving a small amount of oil will be even more tasty.
