I am 70 yrs old, born in Hanoi in 53 and my parents moved to Saigon same yr. I belong to the losing side. I had banh mi back in Saigon in the late 60s. the vietnamese baguette, of which the banh mi bread is just a shortened version, has rice flour mixed in with wheat. hence it is quite soft. it's crunchy only when it is hot out of the oven. back in 69-71 when i left to study in the US, the banh mi has chicken or pate, vietnam version of course, melted margarine, hand made mayo and the all the pickled vegetables you see now. I was educated by the french and frankly i prefer the real french baguette over the vietnam version of it. Here in the US we have just about everything except perhaps the snails, frogs ie ingredients that come straight off the fields or canals. Glad to see you enjoy the trip to Vietnam. I bear no ill will to the common people but it grates on me to see the communist flag and uncle ho everywhere. Also i must mention that from my experience of watching youtube videos of current day vietnam, my memory of vietnam is much prettier, cleaner, romantic than what is there now. Just a simple fact of life: less people, less trash, less development, way less despoiled with much more nature. oh well, c'est la vie

The simplicity and kindness of the Vietnamese people seemed to make the country more beautiful, and the Vietnamese cuisine was also very flavorful. ㅋㅋ 네, 라면엔 김치. 하노이에 한국 음식점들이 상당히 많던데요. 간판이 그냥 한글인 곳도 많고... K 뭐 하는 콘텐츠가 인기가 많아서 인지 새삼 놀랐습니다. 심지어 여학생이 한국어 배운다며 한국어로 인사하고 말도 걸더라구요. (제가 너무 한국인같이 생겨서...) 새로운 경험 많이 하고 왔네요.
