I'm the same. Who would have thought I'd fall in love with Aubergines! (Eggplant for those not in UK) and filo is my go to for pastry. Haha

I'm watching this 4 days before Christmas 2023, and thinking how nice that recipe would be with leftover Turkey and stuffing, and maybe cranberry sauce inside the filo parcels.

The way you folded the phyllo dough was exactly how we used to fold paper footballs when I was a kid at school--except we didn't have this delicious filling in them! This is way better!
