Love how most of these are just simple, inexpensive practical tools, pans, etc. You don’t have to go all fancy Williams and Sonoma all the time.
Actually - My BY FAR favorite things for cooking are my hands and fingers - and most of us have them as standard equipment - and don't owe a dime for them! Keep them nice and clean and they last a lifetime too!

Kitchen scrapers are great for scoping up stuff of the cutting board, I use an autobody bonds spreader, available at any auto supply,
Cost is less than 2 bucks made out of plastic works great.
Hey ATK, love this video and I love the push towards getting to know the cooks more. I know times are tough right now and all this experimenting comes with a lot of great successes, but does it have to come with vertical video too? I completely agree with Becky! The insta-read thermometer is absolutely key. I use it on the grill, on the stove, in the oven. The single greatest investment I ever made.
Watching Becky's thermometer fluctuate was fascinating for some reason lol. 74! 🏁 I love seeing her in videos. She makes me feel at home. 😊
Lan makes me want to get a whetstone even more than I do on a normal day. Remember, it's a cozy kitchen, not tiny. 😁

I love the items that show a lot of “love” to them.. like the cast iron pan... I think my favorite tool as of late are my cast iron pots / pans. The Thermopen is on my wishlist!!
Suzanne Taylor I don’t normally do this but I thought I would share my story with you. My grandmother’s grandmother had a 12 inch cast iron skillet that she used every day of her life. When she died it went to my grandmother. And she used it every day of her life. When she died it came to me. In addition to the cast-iron skillet I also received my grandmothers 12 inch carbon steel pan that she purchased when she married in 1928 And I have been using both , along with a 12 inch lodge
chicken fryer with lid that I received from my mother-in-law as a wedding gift. I know that everybody touts how fabulous all clad is but I received an all clad skillet sometime ago and everything stuck to it no matter what kind of oil I used or what temperature I used it at. Unfortunately that very expensive skillet is now in a drawer. I have cooked everything in those 3 pans
and I mean everything including spaghetti sauce which they say you can’t do but I’ve done it without any problem. LOL. I hope you’ll forgive me for rambling on but I thought you might find my story amusing.

I also inherited my moms and some of my grandmothers much loved kitchen gadgets, from a wooded pastry cutter, cast iron and my grandmothers little red riding hood cookie jar. They mean the world to me especially knowing that they both loved to cook and bake for friends and family ❤️

Dan, love the wire skimmer. Didn't know I needed one until I bought a wok, now I use it for everything: boiled eggs, french fries, digging for bay leaf in bolognese sauce. Will look into that pan for laying down spoons.
Love the Thermapen. I've used one for years.
My favorite is a slow-cooker. Very versatile and underrated. Along with the traditional foods you can cook fish and even bake bread.

The isi measuring cup are heat resistent too, you can pour hot liquids in and still be able to handle with out pain

Enjoyed the video! We have the spider, Thermapen, minipan and carbon steel skillet, which came with my husband 35 years ago, it is totally nonstick, and Dan, our resident black cat is named Raisin.

I'm glad I'm not the only one. On the scale of first world problems, this is even worse than talking at the theater. And we know there is a special level of hell for child molesters and people who talk at the theater.
Love the 1/8 sheet pan. Have detested "spoon rests" for years, too small, too weird, too convoluted to wash easily. Finally lucked into a melamine tray that size that wasn't hideously ugly and didn't cost $50, so it's great for now. When it bites the dust (or if my next kitchen is smaller), I'll go that route. It can do double duty in the toaster oven.
Love that nickel plated cast iron, any suggestions on where to find some? I did a quick search and could find nary a seller.

I agree with Lan on the worth of the Mac knife ... "Mac the Knife?". My parents gave me a 4-piece set of Mac knives, that ranges from a from paring knife, to a chef's knife. That was in the early 70's, and they remain invaluable.
I'd have to say my digital scale is my most used item, but my good ol' garlic press is my favorite item to use. 😁

I am really glad I viewed this. In fact, because of "Steve" recommendation, I purchased the silicone measuring cups. With regard to the cast iron skillet which was shown and noted as being coated with "nickel", is this safe? Doesn't the nickel leak into the food. He showed baking a pizza but lined the skillet with parchment paper.

My essential Kitchen implements are in no order (Function before form, But if they look nice/quality it's better)
Old school black cast-iron skillet with a machined/polished cooking surface So non stick and can handle hi temp
Digital weigh scales 1 for tens of grams one for hundreds of grams
Enameled Dutch oven and a Brazier nice but not necessary
A Bread, 8 inch Chef, Pairing, and Filleting Knife
Digital timers you need more than one
Saucepan
Measuring cups and spoons

Is there anyway you could provide the exact dimensions to the eighth size sheet pans Dan uses at home? I bought the one's on the link (10x7) and they appear to be different. Dan's appears to be longer and thinner, like 8x5.

Pro tip...turn your camera sideways before recording video. You'll get (and provide) HD as a result, and will be able to fit more information in one frame...you know, just like they do at your job!

I wonder how Dan Souza deals with the film that dishwashers leave on aluminum sheet pans? I always hand wash my aluminum sheet pans and utensils.......
The whitish grey layer is actually a good thing - it's a layer of aluminum oxide, which is important not to disrupt, or it will just oxidize more and eat away at the pan. If your aluminum is shiny, it's usually not a good thing!
I think if you use the right dishwasher detergent, you can avoid that. Personally, I just use stainless steel. It works just as well for the way Dan is using them, is more resistant to screw-ups, and in those small pans is about the same price. I have a couple of stainless pans sized to fit my small toaster oven that are about the size and shape of standard rimmed eighth sheets. Maybe an inch off, but close enough that I still use them as eighth sheets when dividing recipes. I'm sure you can find stainless steel eighth sheets for $10 or less. Small quality aluminum sheets are surprisingly expensive online. Like the small ones are more expensive than large ones. Economy of scale, I guess. A Nordic Ware aluminum eighth sheet was like $10-15 or more last time I checked. Quality thicker aluminum sheets are probably more resistant to warping since they heat more evenly, and thus are better for baking small projects if you're going to bake little breads in your eighth sheets. But I have made decent focaccia and pan pizza in my warped little stainless steel toaster oven rimmed sheets.

Nickel is toxic to many people. Better off, in my opinion, to get an enameled cast iron pan if you don't want bare cast iron.
I use my thermometer all the time. But 74* inside. That’s to warm. 😊

Without getting too creepy let me just say Becky has handled the quarantine better than any of us. Or at least me anyway. And I use my thermopen a lot not just for protein but oil temps too.

sjaffe i was just utterly dumbfounded by how terrible that cast iron looked at first. Had to replay it to find out about the nickel plating. The reviews of that pan are pretty awful. I’ll stick with normal seasoning and no plating.
4:38 That’s a big NOPE! You do NOT want nickel in your food!! It’s even banned in the UK because of its hyperallergenic quality, among other things.

Beware the links do not take you always to the exact item being recommended. The knife for instance, the handle part on hers is very different from the one the link brings up, this is because the knife listed above and the knife shown are different brands! The cast iron skillet. He tells you his is nickel coated made by a company called Olvida, yet the link takes you to a plain ordinary cast iron skillet by Lodge. Why? Searching for an Olvida skillet online, brought me only to "not available now" sites. So the ENTIRE point of recommending this skillet, as you don't need to season it and it won't rust is totally lost by showing us a Lodge skillet!

We call it a spider, not a skimmer. And, yes it's bamboo. If it's a fave you'd know this.
Who is this "we" you speak of? Do you have a mouse in your pocket? And calling it a "spider" is wrong anyway; it's a spider's-web skimmer, so called because of the pattern the wires make. So whether one calls it a "spider" or a "skimmer," either is as correct as the other because both are abbreviated names.
I hate the cast iron pan coated with nickel. I get sever rash just for wearing earring with nickel in them. I can’t imagine cooking and eating them, I’ll probably die.

wakajumba - Pizzas are just open-faced sandwiches. They’re pretty much a blank slate, since you can sub tomato sauce with anything else and still call it a pizza, as long as it maintains the same form factor (whether round, oval, rectangle, square, etc...as long as it’s open-faced).
Just as there isn’t a “wrong” sandwich or wrap (again, blank slates), there’s no such thing as a “wrong” pizza....just something that doesn’t work for your particular tastes.
