The problem I have with these two methods for the same reason. It immobilizes the bite you use for tension. The method I teach at my job is 2 round turns & pull a bite from the anchoring end to form the loop. Pass the tail & half hitch a slip knot above it like a sheet bend. This lets the first bite slip a little as it's tensioned preventing the rope cutting itself. The second part with the tie off is so it's easier to untie after being loaded & resisting bouncing & vibration working the tie loose.

For the loop i usually use the Marlin Spike and a carabiner, but Figure 8 instead is nice and easier to loosen.
Different to the way I was taught, both quite good.

Second one seems unnecessarily complicated, the upper loop seems to serve no actual function
The figure 8 will be difficult to untie if placed under heavy load. And I would not trust the sheep shank to remain tied if being bounced around.
