    Sodium bicarbonate is baking soda for anyone that is curious. (used in brine)

    Jeremy. There's a dish unique to the area of Michigan and Ohio in the US called Almond Boneless Chicken. The chicken breast is breaded before frying and it has a brown gravy and served over shredded lettuce. It is served in nearly every Chinese restaurant in those areas. I have tried to replicate from online recipes but am unsuccessful.

    Jeremy, THANK YOU !! My Chinese friend’s mom would serve this pork chop on top of simple noodle soup, too. It was a happy time and a happy meal !

    I’d love to see recipes where Chinese cooking influenced other cultures. For example, chicken manchurian or Malysian curries. Keep up the good work!

    Fab recipe! Thank you. I gifted my DIL with a Jeremy Pang SOW non stick pre-seasoned wok, but we still don't dare use steel utensils on them... didn't know we can 😃

    I am wondering if using cornflour as batter is usual? I’m gluten intolerant and hubby and I love Din Tai Fung but I have digestive and skin issues if I eat too much gluten. It’d be hard to skip The skip dumplings but if I could eat the pork chop if it’s covered in cornflour and bicarb at least I can eat something other than just rice. Thanks for sharing this recipe.

    In the late 70s, a local Chinese restaurant had a skinless, crispy fried chicken that was amazing. Never have seen it again but would love to know how to cook it

    I add fish sauce to my marinade or you can use the fish sauce as a condiment for dipping on the side.

      @@SchoolofWok You could also consider doing DTF's garlic kai lan - it'd compliment this one nicely.. and perhaps a small series on Chinese-style veggies - this would be a nice way to showcase the huge variety of greens like celtuce or mustard greens home-style. Thanks!
