    just wanted to say i cut up the lower part and dehydrated the tougher part, then i powdered it to shake on things for a mild flavor. almost a buttery garlic taste to it!!

    I love to cut garlic scapes into small slices like a scallion and eat on pizza. Amazing flavor! This is my first year growing my own garlic, thanks for the info!

    Why did you save one scape after harvesting all of the others?

      Yes, I'm sorry. I never got back to that in the video and didn't realize it until after I had published it. When the one remaining scape stands up straight and starts to flower it is a good indication that the rest of the garlic is ready to harvest

    Use the older stalk in soup stock.

    I would toss the tough part of the stem in a stockpot before it ends up in a compost pile

    Do harvesting scapes allow the garlic bulb to grow bigger, or any other benefit besides having delicious scapes to eat?

      Yes, by removing the flower stalk (scape) you allow the plant to focus on bulb development instead of growing the flower.

      @PALTOOL1111 sounds good. I might try making for pizza.
      A shop I worked at used whole cloves and butter then spread it on the crust. One of the best pizzas ever 👍🏼

      Then you add some broccoli and cheese lol

    Great video, concise and to the point. The only thing I think I'd add is, be
    careful how long you leave them in the ground during the drying period.
    What we have experienced is if left to long the cloves seem to split away
    from the stem and the protective skin will split. This doesn't make them
    unusable, they just wont store well. Use them first, or, if there are several,
    just dehydrate and powder for the spice cupboard. TYFS

      I've never tried that! Would that be BBQ as in grill them, or flavor bbq sauce with them?

      Marilyn Heinrichs, I do all of my veg on the grill. I usually just put them in a big metal bowl and drizzle olive oil and salt and pepper. You could sprinkle a wee dry rub on them in the mix. But as they have such a lovely garlic flavour, they are perfect as they are. I found that if you leave them long, it’s better so they don’t fall down the grate of the barbecue. Stay safe!

      Yeah, I realized that after the fact! Dang! You leave one scape on because when it stands straight up and the flower starts to open that is a really good sign that the rests of your hardneck garlic is ready to harvest.

    how do you tell the difference between hardneck and softneck garlic? Which do they sell at the grocery store?

      Most varieties that I have seen at the grocery store are soft neck. Bulbs of hardneck will have a hard stem in the center that is very noticeable. But if you are buying individual cloves to plant you will need to check the description to tell if they are hard or soft neck.

    Do you cut off the seed head of the scape also before you cook with it?

    Is there a benefit from cutting the scape closer to the flower? Wouldn’t the scape stop growing and more energy transferred to the bulb? If this is a dumb question, I’m asking for a friend.

      The scape will stop growing either way. I usually try to cut them where the stem is still soft, but of you want to cut it back further that is fine.

    Very informative video. One question - if you harvest the scapes relatively early (say just as they get to about 6" as you suggested); will they regrow such that you might be able to get a 2nd or even 3rd scape from the same garlic plant? Thanks!

    So when the garlic is ready to pick from the ground, and the flower at the top of the scape is seperating in to little pieces, are those pieces like a seed that can be planted to produce garlic cloves for next year?

      Technically yes, but that is not the traditional way to grow garlic. You will have a much better crop if you plant full cloves instead of seeds.

    Can I harvest before the garlic is ready, so now?

      If you just planted in October then you can't possibly have scapes yet. Scapes for October planted garlic would be growing until like next spring. Any growth you see now would just be the first sprouts coming up. Not scapes.

    what about PESTO for the whole scapes once they are chopped / pureed?

      I have seen some recipes out there for pesto made from sacpes and they look good, but I have never tried one. I'm hoping to give one a try this year.

      Freeze scape pesto in ice cube trays. When frozen, pop out and store in a freezer bag. Add a cube(s) to recipes or smear on a pizza crust with oil, seasonings, thin tomato slices and assortment of grated cheeses. Bake until cheese is melted.

      I’m making pesto out of mine. I’m not a fan of basil pesto (I’ll eat it but it’s not my favorite) but I love anything garlic flavored!

    You said you would explain why you left 1 scape, but you never got back around to that part. Additionally, you didn't call out if what would be the flowery head can be eaten or if it should be removed at the joint prior to eating? Thanks!

      It is really apparent when the plants get growing. The bulbs on hard neck have a very ridged stem running through the middle. When buying seed look for hard neck varieties.

    My first attempt at garlic, I had beautiful plants, ignorant of scapes, so didn't remove them, waited too long and got very little garlic. This is my third year hoping I get it right this time. I count 60 plants.

      @@Yodrop Sounds like words of experience!😊 I think you're
      right. Last year we harvested all 57 plants/bulbs that we
      planted the Autumn before. Cured them and set 12 bulbs aside
      to be planted last November for this years crop. Leaving 45
      for use, then gave 12 bulbs to a family member to try. 33 left.
      We harvested mid July last year, ran out March this year, 4
      months short to make it last all year. BUT, also, we didn't have
      any to dehydrate for Garlic powder or Garlic salt.
      In my opinion, if you have the real estate, There's no such thing as,
      TOO MUCH GARLIC 😋😋😋

    You need to wear a white shirt so we can see the scapes. Also, what part of the country are you. Thirdly, what aid hardneck garlic?

      I will keep the white shirt in mind in the future. We are in Zone 6 Utah. There are two types of garlic hardneck and softneck. Hardneck varieties have a stiffer neck because of the scape (or flower stalk). Hardneck varieties are the ones that most often produce scapes.

    So why do you leave 1 Scape on garlic please. I just picked hardback elephant garlic. .letting dry right now .I did cut off tips of scaies n cooked in 400° preheated oven 10 minutes yum

      Yeah sorry, I didn't realize that until after I posted the video. You leave the one so that you can tell when the rest are ready to harvest. When the 1 scape stands up tall and starts to get a flower head that is a good indication that the others are ready for harvest.

    There is more to do with scapes than just stir fry or salad
