just wanted to say i cut up the lower part and dehydrated the tougher part, then i powdered it to shake on things for a mild flavor. almost a buttery garlic taste to it!!
I love to cut garlic scapes into small slices like a scallion and eat on pizza. Amazing flavor! This is my first year growing my own garlic, thanks for the info!

Great video, concise and to the point. The only thing I think I'd add is, be careful how long you leave them in the ground during the drying period. What we have experienced is if left to long the cloves seem to split away from the stem and the protective skin will split. This doesn't make them unusable, they just wont store well. Use them first, or, if there are several, just dehydrate and powder for the spice cupboard. TYFS
Marilyn Heinrichs, I do all of my veg on the grill. I usually just put them in a big metal bowl and drizzle olive oil and salt and pepper. You could sprinkle a wee dry rub on them in the mix. But as they have such a lovely garlic flavour, they are perfect as they are. I found that if you leave them long, it’s better so they don’t fall down the grate of the barbecue. Stay safe!

Yeah, I realized that after the fact! Dang! You leave one scape on because when it stands straight up and the flower starts to open that is a really good sign that the rests of your hardneck garlic is ready to harvest.
Most varieties that I have seen at the grocery store are soft neck. Bulbs of hardneck will have a hard stem in the center that is very noticeable. But if you are buying individual cloves to plant you will need to check the description to tell if they are hard or soft neck.
Is there a benefit from cutting the scape closer to the flower? Wouldn’t the scape stop growing and more energy transferred to the bulb? If this is a dumb question, I’m asking for a friend.

My first attempt at garlic, I had beautiful plants, ignorant of scapes, so didn't remove them, waited too long and got very little garlic. This is my third year hoping I get it right this time. I count 60 plants.
@@Yodrop Sounds like words of experience!😊 I think you're right. Last year we harvested all 57 plants/bulbs that we planted the Autumn before. Cured them and set 12 bulbs aside to be planted last November for this years crop. Leaving 45 for use, then gave 12 bulbs to a family member to try. 33 left. We harvested mid July last year, ran out March this year, 4 months short to make it last all year. BUT, also, we didn't have any to dehydrate for Garlic powder or Garlic salt. In my opinion, if you have the real estate, There's no such thing as, TOO MUCH GARLIC 😋😋😋

I will keep the white shirt in mind in the future. We are in Zone 6 Utah. There are two types of garlic hardneck and softneck. Hardneck varieties have a stiffer neck because of the scape (or flower stalk). Hardneck varieties are the ones that most often produce scapes.

I would toss the tough part of the stem in a stockpot before it ends up in a compost pile

Yes, by removing the flower stalk (scape) you allow the plant to focus on bulb development instead of growing the flower.
This is my first time harvesting scapes. They smell wonderful, can't wait to cook them 👍🏼

The scape will stop growing either way. I usually try to cut them where the stem is still soft, but of you want to cut it back further that is fine.

No, just one scape per plant. They won't regrow.

Technically yes, but that is not the traditional way to grow garlic. You will have a much better crop if you plant full cloves instead of seeds.

We are in Utah, but garlic grows in most areas.

what about PESTO for the whole scapes once they are chopped / pureed?
I have seen some recipes out there for pesto made from sacpes and they look good, but I have never tried one. I'm hoping to give one a try this year.
