    I miss Tijuana and Baja I spent much of my life crossing the border for food and fun, but no more it’s just not safe anymore.

    I like to put my asada in a smoker for about 30 minutes or so. It's sweats the meat a little, adds a wonderful smoke flavor. I then take the carne off, place it a bowl and cover with aluminum foil until final preparation. With the meat cooled and half cooked, it goes to my chopping block to be cut up and placed back in the bowl with the juices from the sweating. Prepare a cast iron pan or flat, making it searing hot. Add a little gapeseed or avocado oil just to coat it, and use the tongs to sear the chopped meat a few tacos at a time. Serve with corn tortillas and desired toppings. Divine and authentic.

    Tacos el yaqui is always full, you have to get there early because they close after selling literally everything around 5

    Mexicali Baja tacos are the best you get way more options for salsa and you can prepare your tacos however the want instead of the taquero preparing it for you... give it a try
