    Ingredients:
    Onion (diced)
    Chopped garlic
    Peppers (in 3 colors) or any vegetables of your choice for fried rice
    Curry leaves
    Cooked rice (preferably cooled)
    Boiled chickpeas
    Chilli flakes
    Fresh coconut or desiccated coconut
    Coconut oil
    Instructions:
    1. Heat a pan and add coconut oil. Once the oil is heated, add curry leaves and chopped garlic.
    2. Add diced onions and fry until slightly softened. Then, add the bell peppers.
    3. Add the boiled chickpeas and mix well. Continue to fry until everything is combined.
    4. Season with salt to taste and add chilli flakes. If using fresh coconut, add it now.
    5. Add the cooled, cooked rice and mix thoroughly. Keep the heat on low to blend the flavors.
    6. Optionally, you can add soy sauce or any other seasonings or meats of your choice.
