Ingredients, this makes 4 servings
Lamb chop, diced
1/2 cup potatoes, diced (4oz)
1/2 cup carrots, diced (4oz)
1/2 onion, diced
1/2 cup leek, sliced thin(4oz)
1/4 cup sweet Peas (2oz)
1 Tbsp garlic, minced or paste (15g)
Salt and pepper to taste
1 Tbsp tomato paste (15g)
1 cup guiness (8oz)
2 cups stock, beef or vegetable (16oz)
Flour
Puff pastry
Add oil to your skillet
Add the lamb and sear on all sides, about 3 minutes per side
Move to the side
Add the onion and garlic
Add a little water and cover to soften the onion about 5 minutes
Add just enough flour to coat the mixture
Add the tomato paste, stir well
Cook about 1 minute to get rid of the raw flour taste
Add the beer and the stock
Bring to a gentle boil and then cover with your lid, turn down the heat and let it simmer about 30 minutes... this helps tenderize the meat
Now Add your carrots, potatoes and leeks and continue to simmer, uncovered, about 30 minutes. This will help the liquid reduce and the stew to thicken up
Add your Peas and cook an additional 3 minutes
Ladel your stew into your pie dish and cover with puff pastry
Brush with a little oil or an egg wash
Air fry 350°F/180°C for 15 minutes or until golden brown
Enjoy!!!

Annie, this is an excellent recipe!! I like you used a lamb shoulder roast instead of ground meat. Wonderful homemade stock and Guinness!!! Yummy 😋 That stew mixture is excellent, thick & creamy. @@anniessmokingpotGood your hubby suggested the roast. I did a meat pie with ground beef. It was no where’s as good as what I had while in Scotland & Ireland. I did meat pies last year that were great. I am going to make this recipe at some point. I may do a hot water crust instead of puff pastry, but the puff pastry looks amazing.
They have a lot of lamb in both countries. This really looks like one of their pies, we had lamb & beef. Great job Annie ❤️I’m glad you are feeling better. It always takes time to feel 100%.

Perfect bite size lamb pieces 👌. I also like to use the potatotes with skin. Beautifully and slowly cooked Lamb along with healthy veggies. Beautifully cooked Stew, covered with the puff pastry sheet and baked to perfection in the Air Fryer. How I wish I could smell it too 😍😍

I'm not a huge stew fan but love the puff pastry top. It has me thinking what i could do instead of stew with the puff on top. Nice job.
Darrin isn't a huge stew fan either, not much of a red meat fan, but he loves lamb so this was right up his alley lol...I did a chicken pot pie a while back but I used pie crust but now I want to make it again with the puff pastry.. maybe try that my friend, in your air fryer 😀 this was really delicious 😋 😍 thank you so much for watching ☺️ 💓 💗 🙏
