  • My husband and I LOVE Indian food! This is the butter chicken sauce I get from Aldi but I always feel like it needs more seasoning added to it. It still tastes delicious and it's definitely a meal we love to eat! Hope you guys were inspired by this idea and try it sometime!

Please don't feel any shame about your cooking skills! It's SO nice to see someone with the same cooking skills I have, shopping at the same places I do - it makes me feel like I could actually add things like to this to my meal rotation.

I add a can of unsweetened coconut cream when I used jarred sauces and it really takes it up a notch :) And more creamy!

    Great meal Gloria!
I make a Red Curry that is pretty simple that you guys may like. It makes a good amount so would be good to use for meal prep.
Slice up 2 red peppers and 1 sweet onion and sauté, once cooked throw in a blender or food processor and puree, set aside.
In same pan cook 3-5 pounds of chicken thighs (diced up), season with salt and pepper, cook through.
Add 1 can of coconut milk, 1 jar of Red Curry Paste (I used the Thai Kitchen one) and the pepper/onion puree. Mix and simmer. Add in heavy cream if you want it more creamy. Serve with rice and/or naan.
This does have a little kick, but it isn't not a bad spice level, at least with the brand curry paste I normally use. I did use a different one because I couldn't find my normal and my daughter and I couldn't take the spice (and she LOVES spice).
Also, if you want to start off trying the recipe you can cut it in half. The red curry paste will keep in the fridge for a bit for next time if you end up liking it.
I hope you try this, it is one of mine and my daughters favorites!! Oh, and you could make it with shrimp instead, I have done that as well.

You don’t need to wash chicken or even rinse it really. Water, lemon, vinegar is not going to kill the bacteria off the chicken. As long as you cook your chicken to an internal temp. of 165° the bacteria will all be dead. I mean if there’s a lot of liquids and you don’t like that then by all means BUT rinsing your chicken is just spreading bacteria around your kitchen. And lemons and vinegar will probably just add flavor and tenderize but it won’t “clean” your chicken.
The main point is cook your chicken to the proper temperature and it will be safe to eat ♥️
Also definitely recommend you buying an instant read meat thermometer to be 100% sure 👍🏽

Washing meat is a huge debate. Its ljke talking about politics. There is no right or wrong answer. They say its not recommended because you risk apreading bacteria everywhere when washing. When you cook the meat, the bacteria will die. Do whatever makes you feel good.

It was always explained to me that if you wash your chicken, the water hitting the chicken and splashing will increase the likelihood of bacteria spread.
    Top google response:
Food safety authorities and regulators around the world recommend you don't wash raw poultry before cooking. That's because washing chicken can splash dangerous bacteria around the kitchen. It's best just to thoroughly cook the chicken without washing it, so it is safe to eat.Jan 6, 2023
