      Barry you will probably have to black out the windows in the new section, natural light is very hard to control, that's why if you go to a professional studio they have no windows, hopefully you'll already have this coverd

    Brings back wonderful schoolday memories. Back in the 90s coming home from school, on the odd occasion it was either very bad weather or my dad didn't have a job (self employed joiner and carpenter for 58 years) he would hate not doing anything in the house so either we would come back to a newly painted wall, in a variety of colours or he wokld bake! He created recipe with brandy in! The molten caramel would be everywhere but the smell of coming in the door was heavenly. I shared this with him and hes been shielding for 13 weeks but tomorrow hes making brandy snaps! We watch you and your family with our three generations. I have always been able to cook despite having a constant tremor and my wife couldn't even boil an egg when I met her 7 years ago. Thank you for your inspiration and dedication.

    I used to be a chef in a foody pub, I had to make 60 of these a day. My fingertips don’t really feel the heat anymore but these were my favourite thing to make. You need to take them to around 160°c (ish)

      Barry Lewis it does look great, like a real film set kitchen (is that what they're called, probably). I feel like your "do it yourself" filming style is going to feel a bit out of place in such a professional kitchen, but I'm sure it will be a lot of fun!

      Not really.
      Cannollis are more of a fried pastry shell
      These are literally melted sugar.

    I made these when I lived in the UK and they are incredible. I didn't use brandy because kids were having them. And the smell when they were baking is wonderful

    I had a pastry chef job where I regularly made brandy snaps by the dozen. They're quick, easy, delicious and look like you've been slaving away in the kitchen all day. I almost always add either lemon zest or oil to the batter.. it adds that little something extra to whatever you do to the cream filling. Adding lemon curd is a great idea!

      Can you eat (or do you like) coconut? Whipped coconut cream is just as tasty as it’s dairy counterpart.

    Norwegians make a similar traditional holiday cookie called Krumkake. The batter doesn’t have nearly as much sugar and we use a small pan similar to a waffle iron except with a very thin, delicate pattern similar in appearance to rosemaling pattern. We stuff the delicately crunchy cookies with a rum flavored whipped cream.

    Yes! I recognise them. Kniepertjes (sort of like k-nee-per-tish, pronounce the k) was what my Dutch grandmother used to call them. Aw, I love them! Haven't had those in at least three decades.

    This takes me back to my childhood. Occasionally my mother instead of cooking dinner we would have a late afternoon tea and homemade brandy snaps filled with cream would be on the menu.

      You can see it just fine, yeah it was a little foggy but it didn’t hinder the ability to see it at all.

    I like the idea of a kitchen office in generally, but especially for someone who's doing a cooking show. It's also useful because many people have a small kitchen in the break room in their offices. This would be a great way to test gadgets and cooking techniques for those who like to make or assemble lunch at work. It saves a lot of money and is healthier than everybody eating out.

    I've been making florentines lately which are the same thing but with nuts and candied fruits in and I made the mistake of putting them too close together the first time. They did end up square but they were delicious.

    We in northwest Germany have a tradition at Christmas/New Year where we make New Year's rolls ("Neujahrsrollen"). The dough is very thin and refined with aniseed, cinnamon and cardamom (almost every family has its own recipe that is kept secret!), there is a special iron with beautiful decorations and it is only used once a year for this purpose. In the local dialect (Low German) we call the rolls "Rullekes". To roll them, we use a cylindrical metal mold (probably 70 years old) that looks like an elongated, large spinning top. My parents always bake a huge tin of them. They are then eaten over winter and on New Year's Eve they are actually dipped in rum and filled with cream. So delicious! This year for Christmas I forgot to take some New Year's rolls with me 😒😂

    I remember making these in the late 60s after having them at both my grandmothers' homes (Connecticut and California). I think they were popular in the US but only for a short while.

    One of my fave biscuits. In Australia we have these but also have ones that are a little thicker & a normal circle biscuit & usually only at a certain biscuit shop but so yummy.

    Imagine to have to do 200 for a banquet. I did baskets during my apprentice ship. To get the timing right is really difficult.

    Hey Barry, just a suggestion for the old kitchen- A really large deep metal sink, like in you'd see in a restaurant kitchen and a metal trestle table drainer. You could pick one up second hand, but it would be extremely useful for cleaning up pots/pans etc after cooking.

    Haven't watched the video yet but - Brandy Snaps! Yum. Haven't had one for a long time. I'm in NZ and I have made them though. Dangerous things Brandy Snaps. You can't just stop at one!

    My Nana and Grandpa used to have brandysnaps in when i was a kid and they were delicious. I havent had them in years and I really want some now but I doubt ill be able to get any now that we are in lockdown.

    There's a very similar snack in Germany called "Neujährchen" (lit.: "little new years"). There are countless regional varieties, but the dough is very similar (also done with sugar syrup, which apparently provides the snap!), and it's usually spiced with cinnamon instead of ginger - the ones my granny used to make also had cardamon in them, which is unusual for sweet pastries, but gives them that special holiday flavor :D
    Also, they are made using something resembling special waffle irons, although the oven will also work.

    I like the idea of having the stovetop in the island freestanding away from the wall, I don't think I've seen someone do that before but it makes a lot of sense especially for filming

      A lot of houses have freestanding stoves on an island in the middle of the kitchen. Nice looking, but not a new or unusual idea really.

    when you're doing the glass molding, (thingy) you have to put the glass into the fridge or freezer so it solidifies faster

    Hey Barry do you wanna make a stonking crispy cheese sandwich/burger? Just throw some cheese into a frying pan and let it cook until it looks like the snaps at 9: 15. You can then scoop it onto any burger or sandwich and it'll harden into a super crunchy, delicious cheese. It can really kick some comfort foods up a notch.

    Barry have you ever tried a cannoli? It's an Italian version of this filled with a mixture of powdered sugar and ricotta cheese.. most pizza places here in the U.S. sell them.

    In the netherlands we eat it on new years day ant call it new year rolls. There is a company that makes only this rolls for years. (Vegters rolletjes) its a tradition for everyone.

    Dont know if you re gona read this comment. But if you want to try a "special" machine. Try the Mayku Formbox to form your own molds (for chocolates for exemple). It's a pretty expensive little machine but you can get your creativity to explose. I know this is not a kitchen gadget or something but well, your kids would love that ;) And no, I not a reseller ! Great video as always by the way..
