I was looking for a quick green beans recipe to go with some left-over chicken for tonight's dinner. What a nice surprise to have found a recipe from Colombia, my country. I didn't know about this particular recipe with milk, but my grandma used to make it with a different kind of sofrito, and since they came out a nice green and a bit crispy I'm assuming that she also blanched them. I also listened to the podcast, what a lovely Thanksgiving story. She seems like a great lady. Oh, and she's right, changua is delicious and perfect for a cold morning, like those in Bogotá and the Andean region in general. Cool channel, I'm glad I found it.
Fave green bean prepping technique - child with scissors... My 4yo and 6yo nieces love helping to prep green beans - we clean their kid scissors well and they just go to town. Fun cutting technique practice and they love having kitchen jobs.
This came at the perfect time, I was planning on making green beans for Thanskgiving but was looking for a way to jazz them up! Also I love the color of your cabinets!
Great recipe. Loved it! I do take issue with Maricel's comment that American cooks don't blanch vegetables. Most people I know who are fans of cooking blanch vegetables, as did my mother and grandmother. We are adding this dish to our yearly celebration!

When I blanch veggies, I feel like the ice water removes a bit of flavor and vitamins (could be wrong, though). I just throw them on a towel and spread them out. They really don't cook much more, and as the steam dissapates they dry out really fast. Also, I'd love to know the name of the color on your cabinets. And maybe a hint to the paint brand. It's a beautiful color.

A random squirrel is one thing, but why is there suddenly a falling tree? For a second I was worried a tree had fallen on Kristen's new house. What kind of story are you trying to tell with these jump cuts, and how is it serving the subject of the video (which is a recipe for green beans, btw)? I'll make the recipe, but continue to be bewildered by the editor's choices here.
Congratulations on your new home Kristin! I never liked the classic American “green bean casserole “ with the fried onions on top. Not to mention a whole can of cream of mushroom soup, yuck! This seems to be a lighter and brighter dish with a better texture/flavor profile while keeping the green beans tender and crisp. No mushy or soggy beans which make me happy! Have a wonderful holiday season in your new home… btw, I love the color of your cabinets!!!
Sorry but Southern cooks DO NOT blanch string beans. You break the stems off and de-string with your fingers. You clean them in a sink full of water then drain them. Put them in a pot filled with cold water with a smoked meat or cook the smoked meat until it falls off the bone. Once cooled remove all bones. Then add the beans to the flavored juice. Add onion, garlic and white vinegar if you want.
As a southerner, who grows green beans, i certainly blanch mine…the results are a lot prettier. I also like to blanch them and serve them cold as crudités. Not sure if my grandma did though.
But this is a Central American green bean recipe, not a southern US recipe. In this recipe you blanch the green beans. The beauty of recipes is that they can carry on cultural traditions. A tradition from one part of the world doesn’t negate the traditions of another.
I'm a little let down, is this really a recipe? Minced a bunch of garlic with blanched green beans plus weird back and forth commentary. How is this worth all the commentary your not making beef stew. Overkill man...

It may not add anything to the tricks, but I don't understand why there is a microwave just over the oven. That seems really not practical. :D
I believe that setup uses a built-in fan under the microwave. Useful if you have limited counter space.
It is very common, in the US anyway. They make them with a built in hood and light and it frees up counter space. I find it very practical and useful.
