How To Make Red Lobster's Cheddar Bay Biscuits

    4 cups AP flour
    1/2 tbsp salt
    3 tbsp baking powder
    2 tbsp sugar
    1 stick frozen butter, grated, don't skip freezing the butter.
    Sharp cheddar cheese
    2 cups buttermilk
    stir all ingredients gently, 20 stirs. Fold out onto floured surface, press it out lightly. Cut out with biscuit cutter
    Bake at 400 until lightly golden.

      A stick of butter is USA only-- how much is that in weight? Why did you not state the cheese amount? Lol.

    Fantastic recipe! Have made it 20 times and my family is obsessed! I don’t knead it on a counter top. Just scoop it into mounds, plop them on the cookie sheet. Also- if you don’t have Buttermilk, and who does?, just add 1 T white vinegar or Lemon juice to the bottom of measuring cup, then measure up to 2 cups milk. Sometimes I used half and half of that’s all I have. The vinegar or lemon juice gives that slight sour taste you’re trying to mimick with the buttermilk. Works every time!! 👍👍👍

    FYI I pat my dough out into a neat square and cut each piece straight down with a sharp knife I lay the squares down side by side for a tender fluffy biscuit this avoids waste or reworking the scraps into a tough biscuit. They are light and fluffy and so good your recipe is awesome and I'm making them on Mother's Day.

    Very spot on recipe and tutorial, but as a former employee of red lobster may i add that before baking the dough is dipped the butter then brushed with butter when they are done. Ive literally seen people have heart attacks from these things.

      Are you saying to coat them in butter "after" they are baked? Or coat both before baking and after baking?

    These were incredible!!! My family went NUTS for them, and all the ingredients are pantry items except maybe buttermilk. You can use regular milk and add 1 T lemon juice OR white vinegar to make the buttermilk. I also didn’t have fresh garlic for the topping so I used garlic powder. Such a quick amazing biscuit to make!! YUMM!!!

    I just made this type of biscuit from a recipe in a current magazine. I am glad I watched your video. The recipe did not do the biscuit butter bath. That would have been nicer yet. Today, I will soften them up by a quick steam in a colander over water in a pot and covering with a lid. I think next time, I will add bacon.

    I suggest putting the garlic butter on *just* before they're ready to take out, then sticking them back in the oven on broil for a few short minutes for a golden brown top

    On Facebook he said one stick of butter and 8 ounces of cheddar. Of course I doubled the cheddar lol... I'm not sure how long to bake I just kept my eye on them until they were golden brown. Haven't tasted them yet tho... I'll be back lol

    This recipe looks awesome. I have compared it to others and this is the one I will try. Only thing is though your measurements are different with what you state in your video Tablespoon measures of salt, baking powder and sugar.. but on your website you state teaspoon measurements for these same ingredients. In the video you state 2 cups buttermilk on your website it says 1 1/2 cups. Which is it? Tablespoon of salt I'm sure should be teaspoon.. but you do say Tablespoon in the video.

    I can not find this recipe on your site no matter what I type in the search engine. I need this recipe in my life. I noticed that you said 1/2 tablespoon of salt but it looks like you may have meant 1/2 teaspoon. Also are you only using the one stick of butter in the biscuit mix or did you use more?

    Is it ok to keep some dough in the fridge. I find this recipe too much for me and want to cook part of the dough the next day so its gonna freshly baked when I eat next time

    Ok. As a chef a a biscuit master I will say this..
    #1 Frozen butter+fine shred with a food processor= Room temp and melting butter in about 2 min.
    #2 Processing the butter before you are ready to add liquid and cheese to the mix=Room temp melting butter.
    So..Flour+sugar*+salt+cheese+Leavening agent. Have liquid ready to pour and scoop ready to use.
    NOW shred frozen butter with a greater so you have thicker shreds going right into the flour. toss butter in the flour like you are breading each strand of butter, very gentile . Make a well and add liquid. Bring together and scoop into tray.

    I made these with milk instead of buttermilk so not nearly as good as it would've been but it's like 1 am and I can't leave and don't have any lemon or vinegar :/ I'll make them again when I have the right stuff but damn they're still delicious. Love this recipe!
