Yes you can. But then you have to power it externally as Arduino cannot draw this much current. practically even for one you should have external 5v power supply. For 8 you would need something like this pl.aliexpress.com/item/1005006325304280.htm. Then you would only connect one signal pin from Arduino to DIN pin of the first matrix and then daisychan the rest

Let the code be for Arduino Uno. Of course, I supply the voltage of 5 volts from an external supplier with a higher current
