Roast parsnips with blackberries, honey, chicory & rye flakes

The last of the autumn's blackberries are ripe, salacious and full of flavour. Once all the berries are picked, the bramble retires back into the hedgerow, unnoticed and still for winter.
In this gorgeous colourful salad, Gill tumbles the berries through a tray of roasted early winter parsnips, where they burst in the hot honey and olive oil, and are cut through by the bitterness of red chicory. A scattering of rye flakes adds a nutty crunch. This is a real River Cottage favourite.

I feel like the modern chef holds a similar stature to any artist, writer, musician or poet. The continued challenge (or struggle) to stay creative, trying new things and pushing boundaries while remaining relevant and consistent. It’s vulnerability at it’s fiercest. The role of a chef comes with a constant bombardment of criticism and unsolicited advice by “experts” and “keyboard warriors” who know nothing more then the cooking reality shows they watch from within the four corners of their home.
