I made this at 6 o clock this morning (yes, my neighbours think im barmy, but they dont mind when I give them a curry). Wow. Had a little taste. It reminded me of the first time I tasted Mr Naga from the jar. Could not believe the symphony of tastes and heat. Gonna cook some madras later.
Hi Steven lived in Central Africa for many years but now living in the Darlington, County Durham. I thinks maybe Griffiths might be a Welsh name which I got from my ex husband. He was kind enough to let me keep his surname. His other wives kept it too lol!!!

I made this on Monday then forgot about it. Cooked some madras tonite (Misty Ricardos recipe, sorry Steven) and added 2 tbs of this stuff. Wow!. I think I have found the holy grail of texture and taste of the curries from the 70's when my old man used to take me to curry restaurant in Lichfield Rd Aston and Cotton Lane Erdington...
Anthony Edwards awesome! I'm going to try and replicate from my first experience behind the scenes at an Indian restaurant back from 1991 though. Video up on it soon ;)
Personally i dry toast the seeds before adding them to the oil. It cracks the seeds open, and releases more flavor. Also, try adding a star anise and a stick of cinnamon for a more broad taste. Looks great though!

I must be very lucky, here in BRISTOL as we have shops like the sweet mart who always have Kashmiri chillies, they also have a wholesale shop opposite that sell everthing but in bigger quanities!

Great video. so what I want to ask is if I was gonna use this to make a madras curry how would I do it? would I first of all fry garlic and ginger, and then add tomato puree and Fry that, and then add good teaspoon or two of this paste and then fry that before adding a bit of stock and cooked chicken pieces before reducing that to the correct thickness??

No, but don't overdo it. I tend to use about 1.5 tsp per person in smaller batch curry cooking. I've got some groovy big batch recipes coming up this week ;)

Hi Patricia. Yes you can, put them into a brown paper bag, not too many in each bag or they'll mould. Red ones are the best to dry. Once they're dried, you can put them into a jar for storage.

I just had the pataks madras sauce with my homemade curried lamb meatballs. the meatballs were fabulous, however the pataks tasted like dirty dish water. never again pataks. they have really really lost their mojo.
Much better to use your own spices! Another crazy addition to use is ginger/garlic paste from a jar! Bloody awful 😞
Worth pointing out that mustard oil is actually banned for edible consumption.
