Quesadilla ring
I very much used whatever I had in for this 😂but you can use your favourite Quesadilla recipe.
I mixed Shredded chicken, 1/2 red onion, 1/2 red pepper and 1 tomato with 1/2 jar of salsa, squirt of bbq sauce, squirt of tomato puree & 1tbsp of paprika.
Then sliced 8 tortilla wraps in half, added the chicken mix to each half wrap, along with grated cheese, folded into a triangle shape and created a ring on baking paper using a bowl in the middle as a guide, sprinkled over more cheese and cooked in the over for 20 minutes on 200degrees. Then just added a bowl of salsa to the middle of the ring for dipping 😋

Completely customisable and delicious!
I put scrambled egg in one quarter, cooked bacon in another, avocado in the 3rd and cheese and tomatoes in the last.
Then folded each quarter over each other into a triangle shape and seared both sides for a couple of minutes in a hot pan 10/10 👌🏼

Put bread in fridge lasts longer I’ve still got bread went out of date in march it’s still soft and no mold
That’s crazy it’s lasting that long
I put mine in freezer and take out slices when needed

We live on south coast have had constant rain high winds too as live along the coastal paths so we get alot of stormy weather from other spots its been horrendous the wettest and coldest they said and i rememeber last year in march and april being in shorts and thats not like me at all but still freezing so let pray and hope we do get climpse of our warm sunshine hope you and boys and your lovely dog well 💖
