  • So this is what happens when you only have zucchini in the fridge...lol Not really, but this recipe is a GREAT example of the many awesome things you can do with just a few simple ingredients and mark my word, I'll be shaving, slicing, shredding , and noodling my way through ingredients to find another one of these glorious veggie meals.

    Avoado Pesto:
    1/2 cup fresh basil leaves
    1/2 cup fresh flat leaf parsley leaves
    1/2 avocado
    1/4 cup olive oil
    3 tbsp parmesan cheese
    1/4 cup toasted pine nuts
    1 tsp lemon zest
    2 whole zucchini
    1 yellow squash
    1/2 cup spinach
    1/2 cup sliced cherry tomatoes
    3 tbsp sliced Castelvetrano olives
    4 tbsp olive oil
    1 tsp picked thyme
    1 tbsp balsamic vinegar

    Next time you make this salt your zucchini, let it sit in a colander for 15-20 minutes then give them a rinse and pat dry. It really helps the the texture of the zucchini to get some of that moisture out of them prior to cooking.

      so true! I've made this numerous times and learned the hard way with the zoodles. it's way too watery if you don't salt them.

    I love that you added green olives to the salad. I'm sure it tastes incredible. I LOVE vegetable pasta and I actually just purchased the slicer that you used in the video but I haven't had a chance to use it yet. It looks so much easier to use then the Veggetti that I purchased from the store that takes sooooo much longer to slice. +Byron Talbott thanks for the video!

    Dude this is right on time...a coworker gave me 3 HUGE zucchini and some mini Roma tomatoes that he grew in his garden and I had NO idea what I wanted to do with the zucchini. Thanx for the inspiration

    Can't wait to make this, always looking for better healthier options. Trying to incorporate eating clean in my diet as much as I possibly can.     Beautifully done! So pretty...so many people do not understand there are many ways to make pesto and loved the addition of Avocado! Healthy and beautiful. Started the low carb high fat diet a year ago and feel great. Will try this.
    We owned Inns for 16 years and loved changing up recipes ...Enjoy cooking! Happy to have found your page. My best!
    And by the way..Pesto means "Italian sauce"... ;)

    I just made this .. I didn't have any olives so I used celery and I didn't have any avocado so I went without but everything else I did by your way ! it is so nice 😆 this taste way better than normal pasta

    Thank you for posting the video and recipe. We have the sprilizer machine and enjoy zucchini spaghetti with tomato based sauce or a combo of macadamia nuts, salt & red bell peppers. It makes a cheesy looking sauce.

      ***** Maria didn't mention that she doesn't eat beans or lentils, grains (obv gluten free), fruits, seeds or veggies. M's diet may still be pretty much sufficient, even if she excludes a lot of foods.

      +Madi Mercer No actually I am never starving nor am I so full that I am sick ..I do eat 3 meals a day 2 are green juice that I add salads to !!the only thing I've left out is sugar..carbs..o have more energy and I feel awesome all clean green organic veggies and fresh fruits tons..I would never starve myself I just feel as I said it's not for everyone but diets do not work..wraps..pills do not work starving yourself is not healthy your body just holds onto the fat...it's about clean eating and exercise

    You can also use a veggetti pro they are inexpensive and work great! They make all different sizes and shapes.

      Don't cut out carbs! Human bodies run on carbs. Plant based of course. Pasta is not your worst enemy. Refined foods, animals products are:)

    Hi Bryon...Thank you for all your videos. As I was watching and taking writing down notes, I noticed you drizzled a bit balsamic vinegar in your process of plating the dish but didn't mention the balsamic vinegar until you were taste testing it. Otherwise, it was a very thorough video like all your other great videos.

    I actually just tried the zucchini as pasta part (not the sauce). I'm REALLY positively suprised about how close this tastes compared to actual pasta. Esp. if you want to cut a decent amount of calories, I think this is a great substitution.
