Well, depends where you live or where you have the leafs from, you can clean them in water and leave to dry in the sun or spread on a tea towel in a safe place till they dry.
I just made my second batch of olive leaf extract. The first batch I dried the leaves and the second batch I did not dry the leaves. Both soaked in the same vodka for 2 weeks. I got a compeltly different taste and smell from the 2nd batch, it almost tastes and smells rotten. Is it possible that fungus spores developed in the jar? Wondering if it is still safe to drink ... please give your opinion.
Did you wash and dry the fresh leaves properly before putting them into the jar? There shouldn't be any water left on them. Did you wash and sterilize the jar with boiled water before use? Or maybe the leaves on the tree have been sprayed? It is really difficult to say what the reason is but I wouldn't use it if it taste or smells rotten. I have always done it with fresh leaves so this is definitely not the problem.

What was the liquid that you poured in there and how long did you leave the liquid in there to sit?
That was vodka. Leave it in a cool dark place for 4-6 weeks, shaking every once in a while.
Vodka, and you need to leave it for at least three weeks.

Sorry, not sure about ornamentals. You would need to do more research.
If it is an ornamental variety of a real olive (Olea europea) and not some other tree that is referred as "ornamental olive" result will be the same.

You can do it with oil but it won't last very long. The alcohol tincture can be stored for ages!

tinctures all are made with alcohol or glycerin... not water
