Nice work mate, I had the same issue with the cam chain guide, I’ve not found all of it yet but I expect I’ll find the rest when the sump comes off. I think these engines are notoriously quite mechanically noisy, which is quite noticeable until the exhaust notes begins to take over and drown it all out.
You could do with a set or two of feeler gauges with. 01mm increments. In ideal world its best to do valves first and then balance carbs as the changing clearances could effect carb balance. Bikes can have rattley old motors, many people (myself included) have spent ££ and time stripping and rebuilding for no change to be found😅 ho hum.
