Just to clarify something about Ume and Gyutaro's fate; the Buddhist concept of "hell" is different from Christianity's. In Buddhism, hell is a place of suffering, but people don't stay there forever; it's less like damnation and more like purgatory. People who deserve to be there stay there for a while, and then are reincarnated and allowed to "try again," so to speak. Ume was permitted to ascend to a higher realm if she wished, because she never chose to become a demon; her brother made that choice for them both. She chose to join him in his punishment, and then eventually be reborn with him so she could be his little sister again. And about her name... Ume means "plum" in Japanese, and the word for syphilis is written with a combination of the characters for "plum" and "poison," so that's the reference to the disease that killed their mother. "Daki" means "fallen princess," and her aliases in her human disguise all ended in "-hime," which is a title meaning "princess." These references would be more obvious to a Japanese audience.
Now Im free to speak without spoiling: see How they are similar: Both are from poor family, but the kamados had a good family, both sufered a loss of little sister that was still alive (nezuko as demon and daki was about to die), what changed their lifes was meeting douma/tomioka, they brought hope to them in diferent ways
On a second watch through of this story arc, lots of little things about Ume and Gyutaro's behavior make more sense. Daki's fixation on prizing only beautiful things, Gyutaro taunting Tanjiro and breaking his fingers, etc. Now we know how their society cared only about beauty, ownership of that beauty, and payment for that beauty. When Gyutaro worked as a debt collector, he probably intimidated his victims by taunting them using all the insults he had received himself, and by breaking their fingers. Once they became demons, they achieved what they might have otherwise achieved in life; Ume became an oiran, and Gyutaro was her bodyguard. He probably made it a point to stay with her at all times since he couldn't protect her the day she stabbed the samurai, since he was away at work. The reason Nezuko doesn't burn the master: his disease is not demon poison. She can do nothing for him. Very different afflictions between Master Kagaya and Guiutarros poison. Nezokos fire can only burn demons and demon poison.
