Grilling a whole chicken for shredding on a Blackstone flat top Griddle

I needed a lot of chicken for tacos, salads and sandwiches. So I prepared a whole chicken by cutting it down the middle and flattening it. I grilled it on my Flat top Griddle, covered the whole chicken with a large skillet and cooked it on low for an hour. came out tender and tasty.

That is a 14" diameter skillet. They do sell dome covers that have a handle on top. I have bought one since this video came out.
