Each week I try to come up with new, budget friendly ideas that keep meal times interesting and affordable & this week I've tried to minimise waste while using up items I already have at home.

✴️ Savoury Muffins
1 & 3/4 cups/210g Self Raising Flour
1 tsp Baking Powder
1 cup/100g Oats
1/2 tsp Sea Salt
9 cherry Tomatoes, chopped small
1/2 tsp Garlic Powder
1 tsp Cayenne Pepper
2 tbs Hemp Seeds
3 tbs Pumpkin Seeds, plus a few extra for topping
1 Tin Chickpeas
50g Cheese, Grated
3 tbs Chia Seed or Flax Seed, ground
1 & 1/2 cups/360ml Milk (I would lower this to maybe 300ml next time)
1 ripe avocado
2 Tbsp Nutritional yeast
Small handful chopped walnuts

Those muffins look so good , so does the buffalo chicken lasagne. Its good to improvise with a recipe & use things we have instead of running to the shops for something when actually we don't really need to. I love savory savory muffins so these I'm definitely going to try. I've got chick peas in the cupboard & I've always got an avocado 🥑 in the fruit bowl ( smashed avocado on toast delicious)l. And ots goid to use things up to save money 💰.

Wow, that buffalo chicken lasagne looked really FAB. Great meals Vicki, I tried to make cheese scones in the airfryer, they were ok but not fabulous, so I blitzed them, added garlic powder, onion powder and oregano and froze them. They made the most awsome crumb addition to y chicken breasts. So much so, I'd definitely do them again just to make the breadcrumbs 😁😁😁
Such a good idea! I didn’t think of using the crumb for chicken. Definitely going to try that 🤩
