One thing I learned the hard way when I had a Traeger: ALWAYS, ALWAYS clear the auger of pellets when anticpating rain, regardless of it being covered. Ambient moisture in the air will swell the pellets and prevent the auger from turning when you resume cooking on your grill. I live in the Pacific Northwest and moisture is definitely a winter problem. The nice thing about the Pit Boss is the handy trap door when removing the pellets in the hopper. After you do that, turn the bbq on to "Smoke" until the auger clears itself of any pellets. It'll save you tons of time by having to disassemble the thing to be able to manually clear the auger.
A few other great things to have are a grill cover if you store it outside,a grill scrub brush to clean it and a pellet sifter It gets alot of the dust out from your pellets and you can actually buy a storage buket that comes with one. I wouldn't buy all those temp probes tho. Just buy a pack of two for 8 bucks and come out to your grill every so ofter to check on it. Pellet smokers are way different then bbqs. You'll have alot of wait time so its good to come out to look at your grill and check your pellets and temp probe read periodically.
If you "close up" for winter and If you live in the country, like I do, it won't take long before mice discover the comfortable habitat provided by a covered Pit Boss in winter. Probably a good idea to put mothballs inside.
Great tips, I bought the pit boss classic. I almost went with the Louisiana for the same reason, but I'm happy with the classic. The smoke aroma and flavor is awesome. I can't beleive I waited so long to finally get one.
Regarding the probes, I'd suggest getting some colored ((high temp) shrink tubing and mark the probes with the tubing so you can tell one probe from the next.
I wonder how a guy like you does not have more subs. Great video and informative. Just bought one of the pit bosses and am just gathering as much info as I can. Been a stick burner for 20 years.
You thoughts on 5 gallon buckets is a keeper but I’ve ready a few places where you need to make sure they are FOOD GRADE else plastic chemicals leach into pellets. Flavors altered.

I have the same grill. Don't pay attention to the cook and actual temp. Put ur probe in the small hole on the side of the grill. That temp and the thermometer on the lid are the Temps u should follow. They're very close.
Wireless probe is junk . 1st arrived DOA. They sent replacement . Second one stopped working after 2 uses. Love the pit boss, the instant read works great. But that wireless is junk.
My pit boss never stops the auger and over fill the burner it will never hold the temperature and it over cook the food the auger never stop for the cool down i can't afford the pellets that it uses
One more tip buy a 9x13 cast iron cake pan get an old grill grate cut to size to put on top of the cast iron pan to catch the grease coming out of what you are smoking makes cleanup of your smoker easy. Also the cast iron helps with temperature swings.
Also let it be known that Levi is anti-gun, I have been wearing Wrangler jeans for about 35 years, won't wear anything Levi's will not wear anyting Nike.like your smoke advice.
Pit Bosses are just ok for the biggest reason is they have a 25-30 deg spread and that’s on all there lines. What a shame as there well built . This is why I did not buy a PIT BOSS.

He's right on that wireless Probe setup. I've owned it for 6 years now and never had an issue. Freezing winters and Texas heat, no problems 🍺🍺🍺
