I learned one trick for making the crunchys from learning to make spaetzle. Put your batter into a cup, and get a strainer with larger holes in it. Hold the strainer over the hot oil and slowly pour the batter into the the strainer, moving the strainer a little bit as you pour. The batter will then plop through the holes, making big drops into the oil and makes for perfectly sized crunchys.

I, too, used to buy Canola oil in the supermarket, because it was supposed to be healthier. Then I found out there's 2 kinds of Canola oil -- cold pressed, and oil extracted with solvents. Unless the canola oil is cold pressed (which is harder to find and more expensive), they use hexane to to extract the oil at a temperature of 212 degrees. As a result, traces of hexane remain in the oil. Hexane is widely used as an industrial cleanser and de-greaser used in many products. However, while it is an organic product, it is easily inhaled or absorbed through the skin; and hexane has been recognized for more than 40 years to cause long-lasting and even permanent nerve damage in feet, legs, hands, and arms. Short-term exposures affect the central nervous system (brain) and can cause headaches, dizziness, confusion, nausea, clumsiness, drowsiness, and other effects similar to intoxication.
