Unsure why it was orginally named Eggman, maybe it was everyone who worked on Sonic 1 thought he looked like an egg. Then when Sonic 1 was going Overseas, the Lead Developer wanted Eggman's Name to be more of a Nickname, and to also appeal to the audience over in the North. Thus Dr. Robotnik was born. Then in Sonic Adventure 1, Sonic in the NA version of the Game used "Eggman" as an Insult, but he was still technically named Robotnik. And after the small References to his Original Name, Both Teams just decided on Eggman, Again, mostly because he looks like an Egg. Also it was probably the series leading into a more comedical side of stories and having a Villain Named "Eggman" Fits that bill. But yeah to some people it is a Down Grade. But it fits. Dr. Robotnik's MBM's opponents are taken straight from the Adventures of Sonic the Hedgehog, more specifically, aside from Scratch, Grounder, and Coconuts, the other opponents in the line up make an appearance in the episode, Super Special Sonic Search and Smash Squad, which details the origins of Scratch and Grounder. You could see characters like Dragon Breath, Arms, Squeel, and Frankly in that meeting that Sonic crashes at the beginning of the flashback.
It’s nice seeing Kirby’s Avalanche in modern day, since it usually gets buried underneath Dr. Robotnik’s Mean Bean Machine (which makes sense, Mean Bean Machine does have Skweel & Grounder).
In terms of Eggman sounding stupid... that was kinda the point it was one of Sonic's original snarky names for Robotnik and he just decided to lean into it and make it his brand after a while
You are not alone in that statement. Many prefer the Robotnik moniker. All though, he’s called Eggman because that was his OG name in Japan. “Robotnik” was something that SEGA of America did for some reason.

Mean Bean Machine was my first exposure to the Puyo Puyo series, and I have been a fan of it ever since. It was also my first exposure to Adventures of Sonic the Hedgehog, one of the best parts of my childhood.
