- The Island of Bornholm in the Baltic Sea belongs to Denmark and is famous for its „Bornholmers“, the local golden, smoked herring. Near the white beaches of the southern shore the Lauwersen family run one of the oldest smokeries on the island. They not only sell Bornholmers but an assortment of fish salads, made freshly every morning by the family’s grandmother after the secret family recipe.
Typical recipes are fried salt herring, smoked salt and muffins with rosehips.

Note: Sea buckthorn (the thing they're blending with the salt) is not rose hip. Rose hip is traditionally used in jams and sweeter dishes but rarely in condiments and spices.

bornholm island, long marauded by baltic bavarians, finally conceded by sweden to denmark.
old powerful europes are now crippled and finally this islanders are in peace. Good foods and wine brew along good musical festive.

Bornholm was a good place to hide during the WW2 located close to tragedy .However today better living is in Poland .I can order many goods cheaper than in Bornholm .

Maybe they'd sell more herring if it was less expensive. It's not "changing tastes" but price that makes me rarely buy it.

I don"t understand why you use a load of water instead of using a smaller fire. You"l steam the fish instead of smoking them tat way.... I'm smoking fish over 35 years by the way...
