Love this recipe! I do it very similar, buy the whole cap at Costco for cheap, rub it in, smoke it up, then finish it off. I smoke till 130 internal, then let it rest overnight (I usually buy the biggest pieces available, almost 10kg/22lbs), the next day I cut 1” steaks, add a layer of butter over them, shred some cheese onto it as well, then finish it off in an Airfryer for 5 to 7 minutes! End results is usually medium well, nice n juicy and the cheese just makes it look great for the gram since we not going for the sear on these! I smoked about 2 of these a week, and consume em all! But that’s because we currently on carnivore diet due to autoimmune problems and this cut of meat is one of the cheapest at my Costco so this is what’s for breakfast every day! Love it!! Hey Tommy, that’s so funny I did the exact same roast last night they had the sirloin tip on sale I did the SPG then I marinated it (Caribbean jerk) for 24 hours then just before I put it in the grill I covered it in competition cow powder I almost grabbed the hard-core carnivore next time I’ll use that to see which one I like better but this came out awesome super tender if prime rib is 100% this was 92% for sure and a hell of a lot cheaper yours was cooked perfect exactly how I would want it no question have a great one as always🇺🇸🇺🇸🇺🇸👍

I do not and have never had a problem. That said. Make sure your pit does not get rained on. Keep it covered!! Double that said. If your not going to use it for over a month, take em out!!
