I usually bake at 200. You should end up with 75% of the original weight when done. Potassium Carbonate Powder can be found on Amazon at around $15 for 12 ounces. In a pinch, you can buy this... (just be aware this contains UNBAKED baking soda. Sodium Bi-Carbonate rather than Sodium Carbonate). _'Potassium Carbonate & Sodium Bi-Carbonate Solution (Lye Water) - 16.9fl oz (Pack of 1) for $15 on Amazon._ Remember..... Kansui should only be 1% of the total flour ratio. Here's a good basic video. ruclips.net/video/_8rsTkOsI2M/видео.html *Happy noodle making!*
Arm and Hammer washing detergent is 100% sodium carbonate, so you can use that. You can buy potassium carbonate by the kilogram (yea that's a lot but... whatever, it's cheap) pretty much anywhere. You can order it on amazon, just make sure its rated "food-quality" so that you get it as pure as you can. I know your comment is pretty old but... here's to making nice alkaline noodles! I'm assuming that's what you want it for =p

@@thalanoth I wasn't sure. I was going by you mentioning _'food grade'_ in your original comment. Thanks! *BTW?* I make my sodium carbonate by baking 100 grams of baking soda _(sodium bi-carbonate)_ at 200 (f) for an hour. After it's finished I have 75 grams of sodium carbonate.
