Why is the carabineer needed? Looks from the video like connecting the camjam directly to the tree huggers would work? Also is there anything stopping me from using one on each end and making it completely knot less?
The carabiner makes it a little easier to be flexible with regard to the thickness of the tree. You could use the cam jam by itself but it bunches up the tree hugger loops. And you certainly could use two camjams but with I really like the slipknot option.

I used this method with camjams. It is very easy but one time the camjam harmed my line so I don't use them anymore.

you set yours up really tight, do you find it more comfortable that way? Hennessy recommends a 30 degree angle.
P.S love the idea of leaving the hammock in the snake skin separately to give more room under the tarp
