- Today, I decided to make some homemade In-N-Out burger! I made two double double burgers, animal style, and some fries, also animal style. 😎 I used the recipe from Serious Eats today -- link below!
Have you guys made In-N-Out at home before? This is def going to be a more regular occurrence for me bc we don't have In-N-Out here in Minnesota!

Can you do a ‘what I eat in a day’ or something like that when your not having your cheat meals?
I can def tell you what foods I supplement with but these meals are a part of my every day life! 🤗 I don’t consider them cheat meals 🤗❤️

I love how you always try to put quality ingredients into your recipes. It helps me be more mindful, too! Also, it is WAYYY harder to film a recipe/ mukbang video than it seems (I’m currently learning lol), but you make it seem so effortless. Great video! 👍🏼

Animal style is actually the addition of pickles and mustard fried patty on the burger , the fries is the cheese sauce and grilled onion . Try adding chopped chillies to the fries next time!

I found an excellent dupe for In-N-Out (since I’m obsessed) and after the first time making them I ordered weights, The Chef’s Press to help the burgers from shrinking. They work great and I’ve used them quite a bit for different meals.

I was born and raised in San Diego and In and Out is an addiction to most people there. 😝 oh and Sam the Cooking guy recently did a video on Shake Shacks burger and he grinds in brisket meat to his ground meat for the burger so the patty doesn’t shrink. I prefer to make the animal fries because In and Outs fries plain suck. They are so dry and awful. Love you!! Keep on making the homemade version of yummy fast food! ✌🏻✌🏻❤️🍔🍔🍟🍟

If you indent the middle of the patty before cooking, it lessens the shrinkage.

I find that if I cook the patties on high heat and in a very hot (preferably cast iron) pan, they almost never shrink up and it also makes the outer edges of the patties nice and crispy.
Shrinking up also has a lot to do with the quality of the meat you're cooking. The meat you can buy in a hyper- or supermarket or a 'cheaper' meat will contain more water, because in mass production animals are fed with foodstuff that is high in sodium (but unfortunately low in nutritions), so the animals will drink lots of water and gain a lot of weight in a short period of time (they 'puff up').
This 'method' is more cost effective and quicker than feeding the animals with fodder and letting them roam free on the fields, because they reach their 'slaughter weight' very quickly. Also, the longer period to slaughter weight or finished weight is part of the reason for the increased flavour and succulence found in meat.
So that is also a reason why buying form a local farmer or a certified organic store is better for the animal, the environment and you.

Just a suggestion if you indent your paddies in the middle and bigger around the outside they dont shrink as much .try than next time
