the OG anime with mechs done in this low-tech/medieval way is "The Vision of Escaflowne" from 1996. it may not be something for the channel but you may want to check it out for personal viewing since you like the uniqueness of the technological level mixed with mechs.
On the water art in this episode, it seems everybody has that one thing they focus on to distract themselves from what they are actually animating. In this case it is "Well, drawing this many mech battles is fun and all, but watch what I do to this water!" The key example I use for this is Ladies vs Butlers ( not for RUclips ). It is an echi anime with the best clouds I have ever seen in the medium. That is a fun game you can play while watching any hand-drawn anime. Find the one thing that is abnormally well animated, that is what the animators are using to destress.
if you re watch the last ep when the lighting hit the missed they were still under powered flight aging altitude, in this scene they were ballistic, already burnt off all their fuel. assuming the oil canisters were shielded some how.
Something I didn't think about until just now is that Ernie has accidentally created a new, desperate need for a very limited resource: Powerful monster cores. There can't be too many of those disaster class monsters to hunt cores from so short of someone finding a way to make artificial cores, does that mean countries are now going to be trying to cultivate the biggest, most powerful monsters? Farming them has to be a long-term process though, and I can't imagine containing them or having them in any sort of numbers necessary for the new demand would be a reasonable thing to do.
From the looks of it, the anime will not get a second season. Cliffnotes from the LN: - Their next adventure will be crossing the Sea of Trees. - The Sea of Trees is home to many more powerful monsters than the Queen Shellcased and that big turtle, meaning... - the Ikaruga will end up destroyed - but not before developing a squadron of FLYING Silhouette Knights that will look like... - A FLYING MERMAID that SWIMS in the air, the prototype "does not exist". - During their adventures crossing the Sea of Trees, they will meet a race that... - As big as a Silhouette Knight. - Last time I read the LN, Ernesti made a Silhouette Knight... - out of wood...
This is a pretty fun anime, it would be interesting to see what Ernie builds next. Not to series although I guess we had some deaths, I did find, like you noted the last episode was a little odd with the talking and showing the creators talking. But still I found this an interesting world and would like to see what's next.
It's a good arc but I don't want them to fit an entire 10 plus volume series until like 20 episodes. Season 1 was 5 volume into 13 episodes and they skipped 90% of the content

It's still probably my favorite isekai. Especially since it avoids most of the things that would later become common tropes.

They squished the heck out of the light novel. 5 volumes into 13 episodes is crazy.
