Hello All. Can any advise the best time of year to pick the berries. With the world ready to implode through stupidity very soon, I want to start getting back to tradition living. Many thanks, stay safe and stay sane.
Best to NOT use immersion blender. I've toured many natural wineries and make my own ciders, wines and cordials. The blades on your immersion blender risk cutting through the seeds and releasing enzymes and off-tasting compounds you do not want in your beverage. Cyanide is one of those. This is why in Europe they (still do) stomp many high end grapes by foot (as in Portuguese Ports) because you want to gently burst the skins open to release juice but NOT break through seed hull. I use a potatoe masher wrapped with foil or you can even press the masher against a tea saucer and get more surface pressure without breaking seeds. Same goes for the stalks they also have off tasting compounds and you want to filter those out soon as in no more than 2-3 days.

I really enjoyed your video! Everything was explained well and easy to understand, plus your voice is lovely as well!. I'm planning to purchase my own elderberry plants as none grow near me, so this video will help me make my own wine when I start harvesting.
Sorry I never ended up filming the second half of this as I was very ill at the time I needed to siphon and bottle - I hope you can find another video for that part of the process and apologies that it never managed to materialise on my channel! Xx
Unfortunately I only have 2 gallon storage bags of elderberries on the stalks (I'm freezing them on the stalk so they come off easy), so I don't think I have 1 kg of berries. I only have one small patch that grows on my property. You don't by chance know how much that amount weighed on the stalk do you?
That also makes perfect sense - we Brits like our silly old weird names for everything so most people would call it a bubbler probably - but I think everyone would know what you meant if you called it an air lock in conversation xxx

Lizzie Dean, Ok, I just found your channel and I thought I was way behind. I make elderberry cough syrup, so I harvest in Michigan in August. I am excited to learn to do this recipe. Thank you for sharing. Blessings!
I have a rare genetic disorder called Episodic Ataxia which means I fall over and slur my words and can’t use my hands - it’s a bit like epileptic seizures in that it is very severe and then gone and caused by weird electro-chemical brain stem activity. It makes me extremely tired after attacks, and lately I have been having attacks every day. I have medication though - it just doesn’t work fully. It seems to go in periods of good and bad though - so fingers crossed for a few good months coming up soon! Xx
I’m sorry I never did - my health deteriorated and I lost my job as a result and then we had to move house - so by the time we siphoned they wine it had been sitting for a long time with the sediment so was slightly soured. I will aim to make some more later this year and film a part two. Essentially all you need to do is wait until the bubbling has completely stopped, and then siphon the wine into a clean demi-John to separate the sediment which will have settled at the bottom, and then siphon from there into bottles. Xx

Thanks Colin - I’m getting closer to a diagnosis and hopefully then I can get some kind of treatment plan - it’s taken 4 years so far so it’s a slow process! I’ve just had my first baby though so feeling very blessed at the moment xxx
@@sutozola Not bad actually. I made one batch with raisins and the first batch with sultanas as I didn't have raisins in at that time. I am now collecting elderberries for a new batch for this year.

It was more, shall we say, rustic than your traditional elderberry wine (if I remember) - a bit down to earth fruitier.

How long does it usually take before bubbles start to show in the bung?
I think 4 days is about how long it took mine to bubble - then it kept bubbling for about 2 months which was longer than I expected. Xx
