I am a Chinese but the first time that I had Shengjian and Xiaolongbao was in my late 20s. My mouth got burnt when I first had those delicious dumplings because I didn't know how to eat them😭I went to Lai Lai Xiao Long every time when I was visiting Shanghai, it is the best Xiaolongbao restaurant in my heart. I think I'm going to Din Tai Fung in Thonglo tomorrow.

Yup vinegar in everything I do now!!!! Vinegar and chilli oil in my noodles vinegar and chilli oil for my dumplings!!! I cant believe ive been eating noodles and dumplings without vinegar for 40 odd yrs!!!! im frikking Chinese as well!!!! its delish!!!!! And people think vinegar on their fish and chips is amazing!!!!??? What!!!? Also the vinegar is the dark variety here its sweeter and deeper... not sure that its the same as the malt vinegar in the UK.... but anyway when you mix this dark vinegar with soy sauce and chilli oil, its flavour town!!!!! And you can drink that vinegar too so its not the sharp lemony vinegar in the crisps.... anyway to any foreigner having noodles and soup a teaspoon of vinegar a teaspoon of chilli oil and the broth you can drink afterwards is amazeballs!!!!

Stayed in the Shangri La Pudong about 20 years ago. Cracking hotel to be fair. I hope you got stuck into some Peking Duck whilst in China. The food in China is so different to the syruppy slop we're served in the UK.
Happy to hear you can taste the difference between Chinese ones. As brilliant as Thai and Malaysian chefs are (including their Chinese population) , they can't seem to get dumplings as good.

good job heading to some local joints. that's where you can get some real local flavors. all the food in tourist areas add a bit of gimmick to attract the non-local chinese tourists so you don't always get something authentic. if you ever need help, just ask. many of the younger crowd *should* know some english lol since it's required in school.
its not the same as xiaolong bao, weird because a xiaolong bao isnt a what i would normally consider a bao because the wrap is thin and more akin to a dumpling... and not the bread dough thickness or texture xiaolong bao actually has soup broth inserted inside.... the juice from your shanjian is just the natural juices from the meat and steam and cooking

I was in Shanghai last week, the premium quality of fried dumplings are $1.7 to $1.9 for 4 dumplings, comparing to the best one in LA that costs you $15 for 8, and the tastes of Shanghai fried dumplings are way much better than LA's, the main reason could be that pork in US is terrible.
Nobody in Shanghai does Xiaolongbao or Pan dried bun (Shenjianbao) with soy sauce or chili oil. Only sauce needed is Shanghai rice vinegar, that's it. Just sayin'
You can't randomly walk in any restaurant. It slso happened to me went back Shanghai a few month ago. Fry dumpling 生煎, no good, with thick skin and double size as original. It's too bad they use brand name like 大壶春生煎, I went two, both fake.
