    We stopped in Shenzhen for a couple days on our way to Thailand from the UK and we were mindblown. Amazing amazing food and awesome people. We loved it. Their dumplings are unreal. Good to have you back, Gary!

    😂😂😂 15 Years ago when I went to China, my brother studied there for a year and I came 2 weeks. He only ate some ally way pork dumplings and had money only to party and lived like a real cheap Dutchman there hahahaha. Soon to be going back, can't wait love these China video's!

    Glad to see you back in the most flavorful area of the world. Both types of dumplings looked incredible, and of course I'm jealous. The hotel also looked to be special, even though I'm not a fan of luxury places. Will be waiting on the noodles for lunch, and also whatever follows. Missed the fundraising video the other day, but I'll go back and give it a look.

    I am a Chinese but the first time that I had Shengjian and Xiaolongbao was in my late 20s. My mouth got burnt when I first had those delicious dumplings because I didn't know how to eat them😭I went to Lai Lai Xiao Long every time when I was visiting Shanghai, it is the best Xiaolongbao restaurant in my heart. I think I'm going to Din Tai Fung in Thonglo tomorrow.

    dumpling eating technique: put it on a spoon, take a small bite on the top, suck the soup, the. eat the whole thing! Double your fun!

    on side note, even we usually call "uncle" in South East Asia... If I remember Correctly in China and Hongkong they call chef "Sifu" mean (Master)
    any other viewer may explain more, especially viewer from China may help us, is the dumpling maker called "SiFu" too?

      if you want to deep dive into noodle things, if u have time, try Shanxi Province noodle capital in the world lol
      there is slice noodle, hand pulled noodle, cold noodle, fried cold noodle (not same with cold noodle) after that get the Moslem style of those noodle, the Moslem style hand slice noodle, hand pulled noodle, cold noodle etc...... then get into "noodle coma" phase there lol
      keep up the good work....

    4:00 Let me translate with a little explanation, it says Shucaiji (the name of the restaurant) was founded in 1980, (served with dumplings that have) thin and soft dough wrapper, filled with flavorful soup/broth, and pan-fried to a crispy golden brown bottom, the broth is rich and savory, but not greasy at all. The bottom line says "Welcome"

    Yup vinegar in everything I do now!!!! Vinegar and chilli oil in my noodles vinegar and chilli oil for my dumplings!!! I cant believe ive been eating noodles and dumplings without vinegar for 40 odd yrs!!!! im frikking Chinese as well!!!! its delish!!!!! And people think vinegar on their fish and chips is amazing!!!!??? What!!!?
    Also the vinegar is the dark variety here its sweeter and deeper... not sure that its the same as the malt vinegar in the UK.... but anyway when you mix this dark vinegar with soy sauce and chilli oil, its flavour town!!!!!
    And you can drink that vinegar too so its not the sharp lemony vinegar in the crisps.... anyway to any foreigner having noodles and soup a teaspoon of vinegar a teaspoon of chilli oil and the broth you can drink afterwards is amazeballs!!!!

    Inland provinces of mainland China, especially Xinjiang, Xizang/Tibet, Yunnan, Inner Mongolia, Sichuan, Chongqing, Gansu, Shaanxi, Guangxi, Shanxi, Ningxia, and Heilongjiang provinces are something to look into.
    Ethnic minorities across these provinces have more to offer.

      Provincial capital Kunming is waving, possible Lijiang, Xishuangbanna (border city with Myanmar) and Shangri-La.
      You can also check The Food Ranger (a Canadian vlogger based in Chengdu with his Chinese wife), Oldwatch Ma, Eat Ai and Little Chinese Everywhere vlogs.
      Plenty of insights, including minority Tibetans, Yi, Miao/Hmong and Hui (Muslim Han Chinese) folks.

    Also a million types of dumplings! Different cook equals a different variety and way and preference to making dumplings etc.... your ones are shanjian baos i think which are half fried half steamed, so half buns half dumplings...
    dont quote me... but if the dough / wrap is more akin to a bun then its a bao!? possibly... theres a technical grey area lol but ive heard these things called shanjian baos and theyre dumplings but theyre called baos.... but im not an expert
    if the wrap is thin like gyoza, which is japanese for jiaozi or dumpling then its more dumpling that most of us are used to... but there are a million types of dumplings, wontons etc

    cool video! shanghai is actually pronounced something like "shh + ung (like the sound in lung) hi" though, the way you're saying it kinda throws me off as a mandarin speaker lmao

    Stayed in the Shangri La Pudong about 20 years ago. Cracking hotel to be fair. I hope you got stuck into some Peking Duck whilst in China. The food in China is so different to the syruppy slop we're served in the UK.

    Happy to hear you can taste the difference between Chinese ones. As brilliant as Thai and Malaysian chefs are (including their Chinese population) , they can't seem to get dumplings as good.

    good job heading to some local joints. that's where you can get some real local flavors. all the food in tourist areas add a bit of gimmick to attract the non-local chinese tourists so you don't always get something authentic. if you ever need help, just ask. many of the younger crowd *should* know some english lol since it's required in school.

    its not the same as xiaolong bao, weird because a xiaolong bao isnt a what i would normally consider a bao because the wrap is thin and more akin to a dumpling... and not the bread dough thickness or texture
    xiaolong bao actually has soup broth inserted inside....
    the juice from your shanjian is just the natural juices from the meat and steam and cooking

    yes, the sign says "operated since 1980, their dumplings has significant features : thinner dumpling skin, juicier, crispier bottom, and not oily. " Last four words at the bottom is "Welcome"

    I was in Shanghai last week, the premium quality of fried dumplings are $1.7 to $1.9 for 4 dumplings, comparing to the best one in LA that costs you $15 for 8, and the tastes of Shanghai fried dumplings are way much better than LA's, the main reason could be that pork in US is terrible.

    Dumping is dumping, what you were eating is called “bao” , hence the dial long BAO and sheng jian BAO. Bao is not dumping. Thank you

    Nobody in Shanghai does Xiaolongbao or Pan dried bun (Shenjianbao) with soy sauce or chili oil. Only sauce needed is Shanghai rice vinegar, that's it. Just sayin'

    You can't randomly walk in any restaurant. It slso happened to me went back Shanghai a few month ago. Fry dumpling 生煎, no good, with thick skin and double size as original. It's too bad they use brand name like 大壶春生煎, I went two, both fake.
