Beautiful! Made this with walnuts and hazelnuts instead of pistachios and used a pomegranate rose flavored syrup for the caviar. I used the more classic spherification technique with sodium alginate because I wanted the caviar to still have liquid inside so I didn't use feta brine in the syrup. It was a hit. Thanks for the inspiration and the amazing technique.

I always follow your recipes and techniques but I wanna say something about this recipe cuz Im from Turkey 😂. You can use clotted cream instead of feta cheese. Or you can make your clotted cream. Which has inside milk, semolina and sugar. I will keep watching u. Thank you for everything.
