I think it wouldn't work, since our brains need a whole lot of oxygen, and an open circulatory system can't move very much blood to organs that need a lot of it. However, if we did, we probably wouldn't notice in our day-to-day life, the same way we don't typically think of our weird bipedal anatomy.

You forgot to find the esophagus, the dorsal blood vessel, and the maxillae. The mandibles that you showed are actually called Maxillipeds. The Real mandibles are just the 2 sides of the mouth. otherwise great video. now I can finish my science project

It's just a figure of speech in order to simplify the process of evolution for his students. After all, the video is on the anatomy of crayfish, and not on the processes of evolution and natural selection.
It's a bit complicated, but simply put, sometimes when DNA replicates it can have ''mistakes'' called mutations (I will not get into much details about that since there are university level courses that are only about that). Those mutations can happen without selection and this is called neutral evolution. Eventually, when an environment becomes more and more competitive, some individuals with specific mutations will survive better and will be able to pass down their alleles to their children. They are considered as more ''fit''; Natural Selection occurs. Slowly, but surely these modifications accumulate and you obtain such individuals. And I just realised that you comment is two (2) years old, ah well. Hope you see it.
Can you explain how before this crayfish "evolved" to get the gills and legs to move together how it survived? Because if they didn't move together before the time they "evolved" then the existence of crayfish would not be.
What your referring to as gonads are actually digestive glands. Gonads lie dorsally to the posterior extensions of the digestive glands and I didn't see much evidence of them in your dissection -- not reproductive season.

Actually, gloves are not needed. Crayfish are often just preserved in alcohol, so it is perfectly safe, as long as you wash your hands afterwards!
