      love it.
      the thin profile makes it easier to be precise with my cuts. like when it's halfway down a tomato, it doesn't pry the tomato as wide as a german knife would.
      maintenance is easy as well. occasionally, there might be a tiny bit of rusting on the blade but can be easily scrubbed off with a wire mesh. I find that it retains its edge fairly well between sharpening sessions as well.
      the straight blade profile however makes it uncomfortable to rock-cut with, something I use a lot. not the worst thing in the world since you can just go up and down but just thought I'll mention it.

      Japanese blades are not made to cut meat with bones, nor frozen things :O It says so on globals webpage, and every manual/webpage of every manufacturer of Japanese knives (unless the blade is made more like western style and it says so, or it is a knife dedicated to cutting meat with bones) @@sunildutta2023

    Great vid! Funny too!
    I have the G2 and five or six other Global knives! I was lucky enough to stumble across a set that was being discontinued and was on a drastically reduced sale price at BBB. I couldn’t believe the price so I asked the clerk, “What’s wrong with them?” She said, “Nothing. This set is discontinued.” So I got a bunch of awesome Global knives for the price of the G2 that was part of the set!
    It took a little time to get used to the thinness of light weight, but I’m spoiled now! If someone said I could only keep one of all the knives I have, it would probably be the G2. If you can’t do it with that knife, you need to just order food from Door Dash.
    Since my original purchase, I have bought another Global knife because when my wife and I were cooking together, we both would tend to reach for the same knife: the Global GS5. It’s actually a few inches smaller than the G2 and works great for smaller everyday tasks when cooking for two. I thought I’d just go out and buy another of the exact same knife but I wasn’t able to find it locally. So I bought the G58, which is basically about a six and a quarter inch version of the G2. A little bigger than the one my wife really likes and perfect for me for most everyday stuff.
    Great knives for me! I highly recommend the G2 and many other knives from Global.

    Best knife for daily preps (professional chef) or home cooks who like to cook at home. The blade is sharp, thin, perfect balance, very easy to maintain and not easy to chip. Perfect.

    Great and funny video! I personally don't use stainless steel handles because it gets a little slippery for me when my hands are a little wet. But all about tradeoffs!

      I'm glad you enjoyed it! yeah I thought that might be a concern especially when working with "wetter" ingredients. I'll find out more as I use it I guess.

      I was worrying about the same thing, since i sometimes have to prep something fast while having greasy hands and just have time to wipe them quickly. So the first thing i tried is completely drench my hand in oil and do some test cuts. Still had a near perfect grip... To expand on that, i decided on this knife a) because of its light weight and b) it fits my hand like it was custom made for it. So for other hand sizes mileage might vary.

    Can you cut with a rocking motion using this knife or only chopping?

      rock cutting is not smooth with this knife. the profile is too flat, it becomes sort of a guillotine up and down motion.

    The paper test is useless if you use regular printer paper. It's so thick that an almost dull knife can pass this test, but the same knife won't cut a tomato without squishing it. Use phone book paper or newspapers instead.

    💜💜👍👍👍. Enjoy your knife..... Back in the day it was only the posh chefs had this knife or rich keeping up with the Joneses. .....but as they so costly their was fake sets of knives about £30 in the UK.... But as soon as you hold the knife you can tell it was not the real thing....mainly the fake set of knives came from Germany... A whole set for £30😀😀 but most chefs use victorinox Swizz make ...not a bad price and it does the job....global soft metal does need looking after👍👍👍

      Swiss made. And next time, do not replace single fullstops and commas with multiple fullstops. Proper punctuation will make your words easier to read, trust me.

    Ive had mine for 10+ years still going strong. Im no knife proffesional but the size is just perfect, perfect length, and height, not having my knuckles hit the cutting board. Havnt chopped thtough chicken bones and stuff with it

      yeah it's a very comfortable knife to use. the 2 drawbacks I've had so far is it's stopping power, of which I will change to my cleaver for. and secondly, the shape of the blade is not great for rock-cutting which I'm a big fan of.
      but other than that, the weight and profile are so nice.

    Heya Alderic,
    Thanks for an awesome video - I really appreciate it mate.
    One of the things that I've been reading in the reviews regarding the G-2 is that people with medium to larger hands - really struggle with the knife being too small.
    I don't think I have large hands hahaha - 18cms by 9cms.
    Thanks again for an awesome video - I'm going to buy one of these now and give it a go!

      you're very welcome. I still enjoy using the knife till this day, no chips or any other defects. it's really nice when doing more meticulous cutting, where the thin profile and weight feels really good.

      I purchased the knife a couple of days ago. All I can say is WOW! It's a delight to utilise. I should have purchased it years ago
