    15 chicken wings
    200 mls buttermilk
    50 mls pickle juice
    1 tsp ground black pepper
    Flour mix
    2 cups plain flour
    2 tbsp corn flour
    1 tsp smoked paprika
    1 tsp chilli powder
    1 tsp garlic granules
    1 tsp onion granules
    1 tsp ground black pepper
    Salt to taste
    BBQ Sauce
    60g butter
    200g tomato ketchup
    3 tbsp hot chilli sauce
    1 tbsp mustard sauce
    1/2 cup brown sugar
    1 tsp smoked paprika
    1 tbsp Worcester sauce
    1 tbsp apple cider vinegar
    1/2 cup water
    In a large bowl add wings, pour in buttermilk, pickle juice and black pepper. Leave in fridge for an hour.
    In a saucepan, melt butter, add brown sugar, tomatoe ketchup, hot chilli sauce, mustard, apple cider vinegar, Worcester sauce, hot paprika and water.
    On low heat gently simmer till the sauce starts bubbling. Keep staring. The sauce will thicken slightly.
    In a large dish, add plain flour, corn flour, black pepper, smoked paprika, chilli powder, onion granules , garlic granules and salt. Mix together.
    Coat the wings in the flour mix one at a time and shake off the excess flour. You can double coat if you like for a crispier texture.
    Preheat your oil to 180 degrees, fry the wings for about 5 minutes, till golden and crisp.
    Pour over your hot and saucy bbq sauce, making sure the wings are completely covered.
    Serve with chips or wedges. Delish!
