Here's a traditional Kutab recipe you can try:
Ingredients:
For the Dough:
2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup warm water
1 tablespoon olive oil
For the Filling:
2 cups fresh herbs (such as dill, cilantro, parsley, and mint), chopped
1 small onion, finely chopped
1/2 cup crumbled white cheese (such as feta or goat cheese)
Salt and pepper, to taste
For Cooking and Serving:
Olive oil, for frying
Sour cream, for serving (optional)
Sumac powder or pomegranate seeds, for garnish (optional)
Instructions:
Prepare the Dough:
In a large mixing bowl, combine the flour and salt.
Make a well in the center and add warm water and olive oil.
Mix until a dough forms.
Knead the dough on a lightly floured surface for about 5-7 minutes until smooth.
Cover the dough with a damp cloth and let it rest for 30 minutes.
Prepare the Filling:
In a mixing bowl, combine the chopped herbs, onion, and crumbled white cheese.
Season the mixture with salt and pepper to taste.
Make the Kutab:
Divide the dough into small equal-sized balls.
Roll out each ball into a thin round (about 1/8 inch thick).
Place a spoonful of the filling on one half of the rolled-out dough.
Fold the other half over the filling to form a semi-circle and press the edges to seal.
Use a fork to crimp the edges or use your fingers.
Cook the Kutab:
Heat a skillet over medium heat and add a small amount of olive oil.
Place the stuffed flatbread in the skillet and cook for 2-3 minutes on each side, or until golden brown and cooked through.
Remove from the skillet and drain on a paper towel.
Serve:
Serve the Kutab warm with sour cream and a sprinkle of sumac powder or pomegranate seeds for garnish, if desired.
