  • Kheer is a traditional Indian rice pudding, celebrated for its creamy texture and aromatic flavors. It’s made by simmering rice in milk until it reaches a luscious consistency, then sweetened with sugar and infused with fragrant cardamom. Nuts and raisins add a delightful crunch and natural sweetness, while optional saffron and rose water can elevate its exotic appeal. This dessert is often enjoyed during festivals and special occasions, symbolizing warmth and togetherness in Indian culture.
    Kheer Recipe
    Ingredients:
    • 1/2 cup basmati rice
    • 4 cups whole milk
    • 1/2 cup sugar
    • 1/4 teaspoon cardamom powder
    • 2 tablespoons chopped nuts (almonds, cashews, pistachios)
    • 2 tablespoons raisins
    • A few saffron strands (optional)
    • 1 tablespoon ghee (clarified butter)
    • 1 teaspoon rose water (optional)
    Instructions:
    1. Preparation:
    • Rinse the basmati rice thoroughly under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain and set aside.
    2. Cooking the Rice:
    • Heat 1 tablespoon of ghee in a heavy-bottomed pan over medium heat. Add the soaked and drained rice, and sauté for 2-3 minutes until the rice is lightly toasted.
    3. Simmering the Milk:
    • Pour in the whole milk and bring it to a boil. Reduce the heat to low and let it simmer, stirring frequently to prevent the milk from sticking to the bottom of the pan.
    4. Cooking the Kheer:
    • Continue to cook the rice in the milk on low heat, stirring occasionally, for about 40-45 minutes, or until the rice is fully cooked and the milk has thickened to a creamy consistency.
    5. Adding Flavors and Sweetening:
    • Add the sugar and stir well until it dissolves completely. Then, add the cardamom powder, chopped nuts, and raisins. Stir to combine.
    6. Optional Ingredients:
    • If using saffron, soak a few strands in a tablespoon of warm milk for a few minutes and then add it to the kheer. This will give a beautiful color and flavor.
    • Add rose water for an additional floral aroma if desired.
    7. Final Touch:
    • Continue to simmer the kheer for another 5-10 minutes, stirring frequently, until it reaches your desired consistency. The kheer will thicken further as it cools.
    8. Serving:
    • Remove the pan from heat and let the kheer cool slightly. You can serve it warm or chilled, garnished with extra nuts on top.
