  • In this easy to follow tutorial, I show you how to make brown butter and banana cinnamon cupcakes.This simple cupcake recipe is an adaptation of a layer cake which is also featured as a video on this channel.

    Recipe details
    125g brown butter+200g butter or margarine
    300g caster sugar +125g brown sugar
    250g broken eggs
    190g mashed ripe banana
    3/4 teaspoons cinnamon powder
    1/2 teaspoon nutmeg
    120mls buttermilk
    pinch of salt
    200g self raising flour
    250 plain flour

    instructions
    Pre heat oven to 165 degree C for 10 minutes before cupcakes are baked
    **Cream brown butter+ butter + caster and brown sugar for 6 minutes on medium high speed( speed 3.5-4 on the mixer used here) check your mixer for speed variations.
    **After 3 minutes minutes stop mixer and stir creamed mixture together with a spatula
    **Continue creaming for another 3 minutes
    **Break eggs slowly with a fork and add to creamed mixture slowly while mixer runs slowly
    **when eggs are added raise speed to medium high and cream for another 2 minutes
    **Slow mixer down to fold fold in flour (already has a pinch of salt ,cinnamon and nutmeg added) in 2 parts
    *before the last portion of flour is added stop mixer and stir the batter together by hand using a spatula
    *Makes 28 cupcakes total

      Hi Thank you for the kind feedback,I'm glad you found some value on the channel.. the recipe for the buttercream is linked below in the description box and it's the easy to follow French buttercream recipe.. the caramel recipe is also linked below and is available on the channel.. I added about a tablespoon ful and half to about 600g of french buttercream already made and mixed together on a stand mixer.. it is such a small quantity of caramel but tastes amazing combined with the buttercream.. Hope it helps x
