There is a jazz guitarist. I remember seeing on RUclips and he was using the extra B string as a walking bass note but apart from that, I don’t quite know what you would use it in a non-metal context.
I'm not a super great guitarist but just mentally remembering it is another B string helped reduce the intimidation. Anything the high B does, the low B can do too. 8 strings on the other hand.... 😂

It’s great for playing powerchords just don’t expect to be able to play any open chords on the low B string
